Sweet Wonder Rolls

My grandmother made these for me when I was a kid and the recipe was in her head, unfortunately when she passed on it was lost! I am so excited to find this and relive a wonderful part of my past. These are so simple and so wonderfully sinful, words are lacking to describe their heavenly taste. I hope everyone who makes these enjoys them as much as I do. I am looking forward to sharing this recipe with the next generation in my family!

Savory Chicken Breasts

Yes, this was easy. If it had ended up on my "best lazy meals" list it probably would get a 5 but not sure I'd ever make it again. I couldn't taste the cheese at all, so seemed like a waste of fat. (I also rarely have Swiss around.) The crumb topping didn't look like too much, but I think it helped give this a sense of being drier than it is. There's plenty of goop to spoon back over the chicken, and when it looked like plenty I thought it would go good on mashed potatoes, so I whipped up some instant real quick. (That part did work out well, since instant taters are a little dull, shall we say?) Not worth buying Swiss for, but I might make again if I happen to have some around needing used up. (Which is probably how I happened upon this to start with.)

Oven Roasted Red Potatoes and Asparagus

Please use measurable terms in your recipes! I cooked the potatoes with raw onion for 30 minutes covered, then added asparagus for 5 covered and 5 uncovered. The asparagus was perfect but the potatoes were still not fully cooked. I may have cut my "chunks" too big? Cooked for another 7 or so minutes and they were good to go, but the asparagus was a little overdone. Tasty flavors, I cut the seasonings way down (garlic, too).

Waffles I

I made this recipe almost exactly. I added thawed strawberries , 1/4 cup applesauce and 1/4 cup oil. I blended wet ingredients in a blender on the highest setting. Then, I whisked the dry ingredients in by hand including whole wheat flour. ############################ We were trying to find a great way to make healthy peanut butter sandwiches for the kids lunches. We are trying to stay away from the corn syrup in jelly. The waffles were slightly sweet and made great lunchbox additions. They were so good that my picky DH ate them. Definitely a recipe worth repeating.

Chicken Curry II

This was pretty good stuff and filling. I never knew what garam masala was and tended to just throw more curry in. Welp, I finally did some research on it and used this as excuse to make my own with coriander, pepper, cumin, cardamon, ginger and cinnamon. Certainly could never be sure of the balance of those but there appear to be lots of variations of it so... much different than curry powder. LOL. I always have boneless chicken breasts around so I used what seemed to be an equivalent of that. Left the raisins off cause the idea of raisins on this kinda gave me the willies. Can we take a vote on how many curry chicken's on here are actually authentic? I suspect not many. It's just a title. Someone wants an authentic one, put one up! (And then call it "authentic" so we can tell.) People many times like the adaptations more anyway. I'm sure much of the Mexican stuff isn't authentic either, and neither are many of the restaurants. I thought this was hassle enough, so if authentic is a BIG hassle, give me this any day.

Corn Dogs

OK so I broke down with the healthy eating-1 day/week won't hurt. Made these to keep the family from revolting against me. They are great-the recipe receives 4 stars b/c the tips to make them came from a reviewer-I followed Keri's tips (she worked at a carny she knows these things) cold batter, dry dogs and no pepper-perfect and I followed another reviewer and put the batter in a glass so it would be easy to coat the dogs-GREAT idea. I added a bit more milk b/c the batter thickened after it came out of the fridge. Will make again

Cinnamon Crackle Cookies

The zest in these really stands out- we loved it! I used only 1 tsp. cream of tartar, and they turned out fine. Next time, I will decrease the amount of sugar in the dough, since they are rolled in it, too.

Chantal's New York Cheesecake

I think I've hit on a magical combination here: The crust: 1 1/2 sleeves graham crackers, 1/4 c. melted unsalted butter and 1 tsp. sugar. The cheesecake batter: Instead of 3/4 c. milk I used 1/2 c. heavy cream and 1/2 c. whole milk. I added 3 TBSP lemon juice and an extra tsp of vanilla. I used only 2 1/2 TBSP flour and that was plenty. I kept the other ingredients the same. I think the lemon juice is key in preventing the cheesecake from tasting bland. As far as mixing it: I mixed the cream cheese and sugar together first, then added the milk/cream, sour cream, vanilla, lemon juice and the pinch of salt together, mixed that until smooth and then added the sour cream and mixed it again. Then I beat the eggs lightly in a separate bowl and added them last, beating just until mixed and completely combined and I think that method really helped keep the cheesecake from cracking. I used a roasting pan full of water on the rack below instead of a water bath. Also, I tented it with foil halfway through baking to keep it from browning too much. Great recipe! Will make again and again!

Strawberry Freezer Jam

I made this weeks ago and forgot to take the picture. As you see I almost missed the opportuity to take one, most of the Jam is gone. Several jars disappeared after a visit from my children. I did cut back on the sugar.

Black Bean Vegetable Soup

This was fantastic. I used 3 cans of beans, chicken stock instead of vegetable, 2 cans of diced tomatoes with green chillis (i pureed one can with half the beans, and just dumped the other can right in), added one red bell pepper, 2 cloves garlic, and tweaked the spices a bit to my liking. I'll make this over and over.

Quick Shrimp Scampi Pasta

Loved this recipe! Simple and delicious! Only thing missing was GARLIC! Can't have scampi without garlic! I used all the same ingredients, but changed the technique. I melted the butter and sauteed the garlic about 2 minutes. Then I added the wine and basil, simmering 15 minutes until wine had reduced. Add shrimp, cook til pink. Add pasta and toss all together. Yummmmmmm.... Huge hit at my house! Thanks!

All American Roast Beef
