Absolutely scrumptious! As other reviewers noted, the recipe makes a lot of juice. I reduced lime juice to 1/4c; used 2c coconut, 2c marshmallows, 2 cans oranges. Added a whole pint of strawberries and 1/3c pecans.

Rainbow Pasta Salad II

I make a pasta salad very similar to this one, but it is also really good if you add a jar of mccormick salad supreme seasoning. You can also add pepperoni, mushroom, cheese or whatever suits your taste.

Pork Tenderloin with Balsamic Plum Reduction

Wonderful, and so easy to pull together. I added a handful of blueberries to the sauce, and since i didn't use the skins from the plums, I didn't have to use the blender.

Authentic Enchiladas Verdes

This is the first time I have cooked/prepared food with tomatillas. This recipe was fun. I had to improvise. I didn't have any Serrano peppers so I seasoned with my habenero sauce (Bob's Fire Sauce from this site) and red pepper chili flakes. My only regret is I didn't have enough of the sauce. I will definitely make this again... definitely. Thanx for the recipe.

Jesse and Steve's Fresh Strawberry Cake

This was my first ever made from scratch cake and I have to admit I was skeptical. I made a few changes like the others mentioned. Instead of sour cream I used strawberry yogurt (yoplait one reg size container) I added a tsp of baking powder and 1 tablespoon of strawberry extract. Other than those few items I kept the recipe as is. It turned out wonderfully.

Grilled Asian Chicken

This was tasty. We marinated the chicken for 24 hours, and after that the marinade sort of "broke" apart so that it wasn't suitable to do anything with, so I can't be 100% sure what it would have tasted like with the basting sauce. Thanks for sharing!

The Best Meatballs

The meatballs this recipe produces are excellent!! I much prefer Italian sausage and meat sauce with my spaghetti, but when it came to these meatballs, I wanted to eat them all myself! I doubled the recipe, but it just wasn't enough. I should have tripled it. Thanks Geanine!

Cashew Chicken Casserole

One of my family's favorite meals. I love it because it's a complete meal in one dish. There are only three in my family so the recipe does make too much. I make it in two 8x8 pans, dividing everything between the two pans; except for the saltines and nuts. I freeze one pan and when I want to serve it I take it out of the freezer and place it in the refrigerator for 24 hours then top with the butter/saltines and cashews. Tastes as good as the first batch from the refrigerator.

Coconut Rice with Edamame

This was delicious! I did have to use chicken bullion, and I didn't have any coconut but those were the only changes I made. My husband suggested I make it again and add some chicken to make it a one dish meal. I will also roast twice as many edamame and save half for snacking later.

This recipe was very good; it produced gooey, yummy brownies. I added chocolate chunks and cooked them for exactly 25 minutes at 350 degrees, and they came out delicious!

Spaghetti Italian

Not a bad sauce. It is very acidic if you follow the recipe exactly. I doubled the recipe to 12 servings, and followed it exactly except for one thing - I used roughly half the amount of tomato sauce. A total of 32 ounces and no more. This alleviates the acidity of the sauce significantly.

Gil's Brioche French Toast

I loved this recipe. I made a brioche recipe (gasp!) from another website because I didn't have enough eggs to make the recipe on this one. I'd like to try it again after a grocery trip . . . with a more authentic brioche, but I imagine this would be tasty with regular bread or even Texas toast. The flavors were simply amazing!

Southwestern Egg Rolls

I made these with 8-inch tortillas and used a bit more stuffing than called for. They were delicious baked in the oven at 425 for 15 minutes after a quick spray. Will make this again!
