Golden Chicken Casserole

My family loved this! I have to admit, at first I was a little skeptical about the apricot jelly and chicken soup, but it was so good! I always say it, but I hate changing a recipe before trying it, but I did. I added red peppers and sugar snap peas. I think a number of different veggies could be added if you wanted to, but it certainly would be great without them! Thanks for the great recipe!

Lynn's Carrot Cake

Chocolate Carrot Cake - never heard of such a thing. I think we've been missing out on something pretty wonderful. I came across this recipe trying to use up a bunch of carrots. Was quite surprised to see it used unsweetened cocoa powder and crushed pineapple. This cake is very moist with a nice light chocolate flavor. I decided to add the chopped nuts to the cake rather than the frosting. I made the frosting minus the coconut as some of my family members don't care for it. This is a wonderful cake and most certainly will be made again in this house.

Creamy Broccoli Soup

Easy and delicious. Mother Ann suggested this soup on thebuzz and I had a lot of broccoli to use up. This soup was very quick to put together. I actually liked the leftovers for lunch the next day the best. The flavors just seemed to meld together. I forgot to add the Cheddar cheese and will probably not add it the next time since we enjoyed it so much as I fixed it.

Plum Quick Bread

Italian Nachos Restaurant-Style

I made this for the recipe group. VERY yummy! Instead of dipping into the pizza sauce I poured it over the cheese (which I meant to pour under and forgot) then took a fork and kinda mixed the cheese and sauce together. This had wonderful flavor and is pretty addicting and hard to stop eating. I made this for lunch for myself thinking my family wouldn't like it, but now I plan on making it for dinner for them cause I know they'll love it!

Easy Pie Crust

Super easy and turned out great. Was the first time I've ever made a crust of any kind. I made a Quiche (also first time) and it was so good I couldn't stop eating it, I almost ate the whole 9 inches!

Tartar Sauce I

I made it for some catfish that ended up tasting so good on it's own so we didn't use it. Pulled it back out of the fridge for some fish sticks for the kiddos and I and it was delicious and perfect. Very light and refreshing. Thanks!

Italian Sausage and Zucchini

Good but needs a little help. Adding some Italian seasoning is a MUST! The sauce is pretty runny but it didn't bother us. I used 2 cans of diced tomatoes. I served this over some heart shaped pasta (valentines is coming up ;) Easy and very easy to adapt to your taste preference. Don't forget to salt to your taste.

Whole Wheat Pasta with Smoked Clams and Fiddleheads

This was delicious! I couldn't find fiddleheads so I used broccoli, about 2 1/2 cups chopped, and I used margarine instead of olive oil. I doubled the amount of garlic and wine.

Lemon Blueberry Drop Scones

Very good recipe. I used 3/4 cup of half-and-half for more richness, I also added 1 teaspoon of vanilla extract, 1 teaspoon of candied lemon zest and 1/2 teaspoon lemon extract. This is definitely a keeper. Thank you for sharing.

Ranch Dressing with Fresh Herbs

Jackpot! Hubs and I both responded favorably at the same time as this hit our mouths. A most excellent, fresh tasting dressing with a perfect balance of each of its components. Other than using equal amounts of the mayonnaise and sour cream I prepared this exactly as written. I loved the combination of herbs and I was particularly fond of the addition of the minced red pepper, which added a lot of character - in flavor, in color, and in texture. One of the best dressings I've tried from this site; one that could easily make me eat a lot more salad! I served this with a tossed salad of baby spinach, Romaine lettuce, English cucumber and sliced avocado.

Pumpkin Chili Mexicana

I’ve never been a fan of chili, so when I make it it’s to please others who are. But I sure did love this! The fact that I might taste the pumpkin didn’t concern me - I wouldn’t have cared if I could. But the fact is, you don’t taste it – what you taste is incredibly darn good chili, that isn’t overly seasoned with chili powder. I don’t ever use ground turkey (icky) so I used ground beef instead. I used my own tomato sauce put up from my garden. As for the green chilies, I substituted chopped, fresh roasted poblano peppers. I also added a good pinch of dried Mexican oregano. I could tell Hubs wasn’t quite as fond of this as I was but I should have never told him there was pumpkin in it, which I think made him think there had to be something weird about this. As for me, I thought it was perfect. It didn’t really need it, but I served this with a dab of sour cream and chopped green onion which made it look all pretty.

Buttermilk Biscuits II

Shirley Corriher (Georgia food scientist and cookbook author) published this recipe in her cookbooks, Cookwise (1998) and Bakewise (2008). This recipe is entitled, "Touch of Grace Biscuits." I use 1 cup of buttermilk and 1/3 cup of cream. I place 1/2 cup of all-purpose flour in a flat dish and scoop the dough for each biscuit into the flour. Sprinkle all-purpose flour over the biscuit and then pick up in my hand and form into a biscuit and place on baking sheet. Excellent melt in your mouth biscuits!

Beer Bread I

I liked this recipe. My husband loved it. I made it as written and decided we like it better with a few changes (increased sugar to 1/3 cup, added handful of sharp cheddar, used a bigger pan and let rise for 45-60 minutes before baking, basted with butter and garlic salt 1/2 way thru baking and at the end (from other reviewers)) definatly a 5 star recipe. I rated 5 star even though I had to make changes to the original recipe because of the ease and quickness of making the bread.

Spice It Up Soup

I followed the recipe except I used bulk sausage instead of links. If you like it hot, don't remove the ribs and seeds from the jalapeno but if you don't make sure you clean them out well. Our family loves heat! Two out of the 4 of us have the sniffles and this was great to help clear those sinuses. Yummy!
