Oregano Chicken

Reviewed: May 16, 2008
I had lime juice instead of lemon juice, and I used pretty well the full recipe of sauce and half the chicken so it would stay really juicy. It was pretty tasty, but we liked it better the next day when we cut up the leftovers and tossed it with pasta and alfredo sauce. The lime juice gave it a nice zip!

Pineapple Chicken Delight

Reviewed: Apr. 8, 2008
I read a variety of reviews before trying this recipe, and I've made a few modifications myself as well. I've made it three times now, once for a dinner party, and it has been very well received every time. I add a bit of soy sauce, Worcestershire, and white vinegar to the sauce, and reduced the pineapple juice. I add the vegetables only for the last 15 minutes of baking because they could, indeed, be soggy and overcooked if they sat in the sauce for the whole hour. Oh, and I marinate the chicken in the sauce for 24 hours before cooking. In any case, my family and friends and I LOVE this recipe! It's easy and delicious; I highly recommend it!

I used proscuitto instead of bacon (I couldn't find any once, if you can believe that), and bbq sauce instead of ketchup. Wow, did it ever turn out well!People I know who don't like beans raved!

Beer and Soy Sauce Chicken

Reviewed: Apr. 8, 2008
Pretty good, and an unusual flavour. I made this on my indoor grill, and boy, does the kitchen ever smell like beer when you're done! The chicken came out tasty and juicy, though.

I thought these were very tasty, but they weren't very well received by my husband. They turned out a little dry and messy.

Brunch Egg Bake

Reviewed: Dec. 20, 2007
I tried this for the first time and served it to friends for a Christmas brunch. It was a huge hit! I made a few changes -- different cheeses, and a little less than called for; no mushrooms, additional peppers and green onions -- and prepared it the night before so it was ready to bake in the morning. Everyone loved it, and I will definitely try it again. Next time, I'd like to add a layer of spinach. This recipe is super versatile, and lends itself to simple changes to suit personal tastes, or available ingredients.

Spanish Flan

Reviewed: Jan. 5, 2006
This is the recipe i've always used... but for what here in Mexico we call Chocoflan or Pastel Imposible (in southern mexico.. Impossible Cake)... all you have to do is prepare a chocolate cake mix and pour it over the flan mixture, then bake it on water bath (350 degrees) for 1:20 hours.... I promise you won't regret it :)

Black Bottom Cupcakes I

Reviewed: Jan. 2, 2006
I have to agree with people who have posted before... the taste was great but the cupcakes didn't come out as I expected. They were at first very gooey and impossible to take them out from the tins and afterwards, the cheese turned hard... i dunno if that is supposed to happen. Maybe I did something wrong, but it really didn't work for me. Thnx anyways =)
