Oatmeal Toffee Cookies

Reviewed: Dec. 2, 2009
Instead of the toffee baking bits, I added 1 cup of chopped sugar coated peanuts & 1/4 cup of coconut, and 1/2 cup of white chocolate chips. Very good! But these cookies stay soft; I like the oatmeal crisps from this site much better. Maybe I'll try that recipe and add the chopped sugar coated peanuts.

Add some fresh oregano, a bay leaf and a couple of chopped dried tomatoes - perks the flavor to a T.

Grilled Whole Turkey

Reviewed: Nov. 23, 2009
I had two turkeys one year, and only one oven, so I fired up my hood BBQ and put the foil wrapped stuffed turkey on it. Did not make the bullion basting fluid, just wrapped in foil. We have never tasted a better turkey!!! Will do again as soon as I have the chance (enough eaters).

Calamari Steaks Parmigiano

Reviewed: Nov. 22, 2009
I'm only giving 2 stars because I may have done something wrong. I don't know what but maybe it was me. The breading just dissipated into the oil. It was a mess. Good thing calamari steaks are so cheap. This was so ugly it never even made it to the table.

Tzatziki Sauce I

Reviewed: Nov. 22, 2009
This is a great base recipe. If you have never made tzatziki, this is a good start. The garlic may be a bit much for some, but for me and my family- we love it! My suggestion- spend a little more and get the authentic style Greek yougart. Most other kinds of yougart will produce a really watery tzatziki. If you can't find Greek yougart, you can fake it by straining it. Take 2 or 3 paper towels and tape it or rubber band it securely to a container. The perfect container would be a recycled 16oz yougart tub- then you have a lid too. Scoop the yougart on the paper towel, cover and place in the fridge. If you can, leave it overnight. You will be surprised at the water that is rendered. Then just follow the recipe.

All-Day Apple Butter

Reviewed: Nov. 22, 2009
wow this stuff is good! i made 40 servings, because that's how many apples i had. according to that recipe i had to add 2.5 cups sugar, i added less than 1, half brown half white. it's still pretty sweet though! i don't really have a sweet tooth... i didn't follow the recipe exactly, i put it in at 8.00 in the evening and was going out, so i put it on low... left it on all night, turned it off around 5.20 in the morning. i didn't see that you had to cook it uncovered. oh well, next time (there will surely be a next time!)...

I've made this cake many times, and my clients always love it! I like to chop a very dark chocolate bar and a light chocolate bar, instead of using chocolate chips. Just make sure to use a good quality chocolate. Thanks Barb!!

Boilermaker Tailgate Chili

Reviewed: Oct. 28, 2009
Don't get put off by the list of ingredients. This absolutely is: A crowd pleaser !! Personally I don't like bell pepper so I leave them out. Also - they tend to get "soggy" when reheating. For the best taste make the night before. Or even 2 days ahead of time. My only real adjustment is to add 4t of sugar to cut the acidity of the tomatoes. And the tomato paste doesn't really add too much.

Double Tomato Bruschetta

Reviewed: Oct. 28, 2009
Make the recipe as is !! It really works !!! To make it authentic I used ciabatta bread. Sliced it, brushed the slices of bread lightly with garlic oil, put them under the grill for a few minutes untill crisp. Top with the tomato mix and SLICES of mozzarella (couldn't get grated the first time and the sliced mozzarella turned out GREAT) Fresh Roma tomatoes give a fabulous flavour. This is a no-fail-favourite !!!!

No Bake Pumpkin Pie I

Reviewed: Oct. 28, 2009
Very easy and a perfect way to use left-over pumpkin. Made with fresh pumpkin ... hmmmm A little sweet - but that's what pie is for ;-) I don't like using gelatine so I thickend the mix with about 1 T of cornstarch. Worked surprisingly well.

Greek Style Potatoes

Reviewed: Oct. 28, 2009
Very, very good. I used oregano instead of rosemary (I find oregano to give more Greek flavour and Rosemary more Italian - but that's my idea) The lemon and chicken bouillon give an unexpected flavour that I personally love with roasted chicken. Use all the liquid !!! I bake the potatoes covered for about 1/2hour, then uncovered for about 3/4hour. When you cut your potatoes a little smaller - cooking time can be adjusted to 1hour uncoverd !! The liquid reduces and starts to caramalize on the sides of the dish... Make sure to tast this...

Happy Birthday Cake

Reviewed: Oct. 28, 2009
Easy and very good for decorating. Quite a heavy cake, but very managable when layering. Sift flour before measuring and again while mixing in. I have used this recipe a number of times (usually for a coloured birthday cake) and haven't been disappointed yet. Use in combination with "Quick and Almost-Professional Buttercream Icing" for a sweeeeeeeet treat ;-)

Paul's Pumpkin Bars

Reviewed: Oct. 25, 2009
I really have enjoyed this recipe! I have had many compliments on these bars and even a recipe request. They are moist and delicious. I did use 1/3 oil and 1/3 melted butter since I ran out of canola oil and a 9x13" pan which I baked for about 40 minutes since it was thicker. This recipe is a keeper!

Navratan Korma

Reviewed: Oct. 18, 2009
This was a tasty recipe but did not taste like a traditional Indian korma that you would get in a restaurant. I followed the directions except did not saute the paneer since I enjoy the soft texture of it. My husband also commented that he enjoyed it but did not think it had the same taste of a regular korma.

Beef 'n' Biscuit Bake

Reviewed: Oct. 11, 2009
My husband loved this dish but I thought it was just okay. We followed the directions but added more spices and subbed pinto for kidney beans and veggie crumbles instead of beef. My complaint was that the bottom of the biscuits seemed uncooked or mushy but the only way to avoid that would probably be to cook them separately.

Gobi Aloo (Indian Style Cauliflower with Potatoes)

Reviewed: Oct. 11, 2009
Usually I do not have much luck replicating the flavors I get in Indian restaurant dishes. This was the exception! It tasted authentic. The only problem I had with it is that the time in the recipe is not long enough to get the potatoes and cauliflower to cook thoroughly. I had to add time to it and as other reviewers mentioned additional water was necessary so the food would not bun. Next time I would cook or par cook the potatoes first.
