Boilermaker Tailgate Chili

Don't get put off by the list of ingredients. This absolutely is: A crowd pleaser !! Personally I don't like bell pepper so I leave them out. Also - they tend to get "soggy" when reheating. For the best taste make the night before. Or even 2 days ahead of time. My only real adjustment is to add 4t of sugar to cut the acidity of the tomatoes. And the tomato paste doesn't really add too much.

Double Tomato Bruschetta

Make the recipe as is !! It really works !!! To make it authentic I used ciabatta bread. Sliced it, brushed the slices of bread lightly with garlic oil, put them under the grill for a few minutes untill crisp. Top with the tomato mix and SLICES of mozzarella (couldn't get grated the first time and the sliced mozzarella turned out GREAT) Fresh Roma tomatoes give a fabulous flavour. This is a no-fail-favourite !!!!

No Bake Pumpkin Pie I

Very easy and a perfect way to use left-over pumpkin. Made with fresh pumpkin ... hmmmm A little sweet - but that's what pie is for ;-) I don't like using gelatine so I thickend the mix with about 1 T of cornstarch. Worked surprisingly well.

Greek Style Potatoes

Very, very good. I used oregano instead of rosemary (I find oregano to give more Greek flavour and Rosemary more Italian - but that's my idea) The lemon and chicken bouillon give an unexpected flavour that I personally love with roasted chicken. Use all the liquid !!! I bake the potatoes covered for about 1/2hour, then uncovered for about 3/4hour. When you cut your potatoes a little smaller - cooking time can be adjusted to 1hour uncoverd !! The liquid reduces and starts to caramalize on the sides of the dish... Make sure to tast this...

Happy Birthday Cake

Easy and very good for decorating. Quite a heavy cake, but very managable when layering. Sift flour before measuring and again while mixing in. I have used this recipe a number of times (usually for a coloured birthday cake) and haven't been disappointed yet. Use in combination with "Quick and Almost-Professional Buttercream Icing" for a sweeeeeeeet treat ;-)

Delicious Ham and Potato Soup

This soup is great! I never made Ham Potatoe or any creamy soups before, but it was very easy to make (I only added a zucchini) and it turned out SO delicious! I love this recipe for cold, wet days!

Hot Fudge Cake

I made this cake as a Christmas dessert and everybody loved it! I made this 'cake' two times, ones in a small oven and once in a big oven. The first time it came out cake-like with much chocolate. The second time it wasn't all that 'caky' en there was less chocolate 'cake'. I liked the second one better and my whole family loved it. Pity that the second time there was less chocolate...

The smell while cooking was devine !! I also cut down the meat (almost half), but used about double wine/water mix... even though I was cooking it on very low heat ?! To cut the acidity of the tomato paste and wine I added about 2 tsp of sugar. Will definately be making this more often. Note: If you don't have whole pickling spice use: 1ts whole cloves, more bayleaves (2), whole peper corns. It's not the same, but will add a bit more flavour.

Lemon Meringue Pie III

Bobotie

I regularly make bobotie and thought to give this recipe a try. It was "okay", but I have to suggest a few changes: As said by someone else - you CAN brown the mince and onions in a pan !! (I usually do). Then add the seasoning + 1 pinch of ground cloves + 1 pinch of ground coriander seed. Use 2 slices of soaked bread that haven't been drained too well and mix into the mince. Then place in a baking dish. Bake at 200C for about 15min. For the topping: if using 2 eggs it gives a lighter and fluffier dish if you use about 150/200ml of milk (maybe even more if you like the creamy topping). Bake 20 min. To make it even easier: If you're frying the mince before baking - place the seasoned mince in a baking dish and pour over the topping immediately. Bake at 200C for 35-45min. untill golden brown. The topping seeps into the mince mixture giving you a deliciously moist dish. Serve with yellow rice with raisins. (Just steam your rice with some tumeric, raisins and a pinch of cinnamon). A light green salad, slices of banana and caramalised sweet potatoes make it complete.

Cheesecake Topped Brownies

I used a +- 450gr box of brownie mix and the full amout of cheesecake ....... WOW !!!!!!!!! As suggested by other users - I didn't use any frosting and to be honest: we didn't miss it at all. This is a recipe to use again and again and again and again and ....

Russian Tea Cakes I

The taste was wonderfull, but they were too dry.... I will be trying them again with a few changes. Rolling them in granulated sugar before baking gave the best results, but the powdered sugar afterwards was a big mess. (cookies crumbling, sugar didn't stick properly). But the taste is absolutely addictive. I used pecans (ground not too finely) and a small dash of lemon juice (I didn't have zest).

White Chocolate Cheesecake with White Chocolate Brandy Sauce

We loved it ! Just two changes: 1) more chocolate in the cake and less in the sauce 2) 70 min. cooking time. This could be because of altitude ?! Wonderfully easy to make, and wonderfully delicious.

Army SOS Creamed Ground Beef

Loved it. I added some mustard and a clove of garlic and it just lifted the flavour a little. We haven't descided yet if we like it better with pasta or with potatoes. Both are great. Another idea is to add hot sauce (we like spicy food.) Terrific comfort food if you're having a bad day !!!!!

Banana Pudding III

Great! I used coconut biscuits and sprikled them with a little lemon juice mixed with coconut-rum. This added a bit of a zing. The result is well worth making again. Everybody was very impressed and some even asked for seconds ('though the pudding is very filling!) Thank you for yet another winner.
