Pumpkin Pancakes

Made this with half regular and half whole wheat flour, as well as only egg whites. Turned out great! Like others said, the batter is thick. Simply use 1/4 cup to pour and spread it out on the griddle. Turns out nice and fluffy.

Cocktail Meatballs

I also used frozen meatballs--Homestyle not Italian. 2 lb bag so I doubled the sauce which was easy with 1 16 oz can of jellied Cran, 1 12 oz bottle of Chili Sauce (more like ketchup -not the super hot sauce). I also added about 1 tblsp Worcestershire. After tasting it seemed a bit sweet so I added some heat with about 1/2 tsp Siracha Chili Sauce---still wasn't right so I added about 1/4 - 1/2 cup of Sweet Baby Ray's Honey Chipotle sauce....YUMMY! I am heating the meatballs in the sauce in the crockpot and then chilling until tomorrow for the party to really let the sauce soak into the meatballs. Hubby can't wait!

The Best Chicken Salad Ever

I thought this was just ok---I did not like the miracle whip as much as I like Mayo with this. I made many changes for our tastes: I always poach the chicken breats and add celery--1-2 stalks, 1/4 of a large onion and slivered toasted almonds. I just toast them in the oven on a cookie sheet. Keep them in the freezer and it takes about 12 minutes until they are toasty on 350. Since I didn't like the taste with the miracle whip I added 1 tblsp home-made curry powder and a couple of tblsp mayo. Hubby loved it this way on toasted Oregon Herb bread with lettuce.

Awesome Sausage, Apple and Cranberry Stuffing

This is now our Thanksgiving Stuffing every year. Dad and my Hubby love it as do I. I follow the recipe fairly faithfully as far as quantities but... 1. I don't usually add the turkey liver 2. I use Pepperidge Farm sage and onion or Herbed (non cube) style stuffing instead of fresh bread. 3. I have used both Turkey Brats and Jimmie Dean Sage sausage or a combo. Lately I have been making it exclusively with the Dean Sage sausage. 4. Use fresh herbs from the garden (double qty) as we are usually in Florida for Thanksgiving with the folks. 5. Never stuff the turkey but make this in a separate casserole--covered for most of the cooking time and remove the lid so we get a nice crust for the last 15-30 minutes depending on how many servings I have made. The fresh apple, Turkey Sausage, fresh parsley and dried cranberries really combine so beautifully flavor-wise. Delicious with Mom's turkey gravy!

Mom's Coleslaw

This turned out great. I used 1 bag 10 oz of shredded cabbage with carrots and one 10 oz bag of shredded carrots as my hubby prefers carrots over cabbage. I made the dressing as stated and let this sit over night in the fridge. I did add a bit of salt and fresh cracked pepper. We served this with Pulled pork to rave reviews. I will definitely make this again.

Grandmother's Buttermilk Cornbread

This recipe is perfect if you like cake-y cornbread. Since I wanted to serve these as lunch, I slightly increased the buttermilk and slightly decreased the butter. I also only used 1/2 cup of sugar. They turned out very yummy!

Octoberfest German Potato Salad

This was a very good recipe that I had to tweak a bit as I was trying to recreate my Mom's potato salad. I at first did not add the sugar but this resulted in a too tangy taste so I mixed up a couple of tblsp mayo with the 2 tblsp of white sugar and stirred that in. Perfect----I also added sour cream and did not use the oil---seemed like overkill with the mayo, and Mom never used oil in hers. Topped with fresh chopped parsley. Next time I will add some celery and red onion for a bit more kick.

The Perfect Mai Tai

I made this over the weekend to RAVE reviews---followed the recipe (almost) exactly. I had thought about leaving the 151 out but after taste tests we all decided it needed the extra oompf! Really super yummy. I buy the Orgeat at my local liquor store and, my one change, used Dole Orange Pineapple juice as a Mai Tai does really need that pineapple flavor for me. juicing the 10 limes resulted in about 1 and1/4 cups lime juice--but I have an electric citrus juicer which makes this much easier---might try Nellies Key lime juice in a pinch.

Oatmeal Peanut Butter Cookies III

If you love peanut butter, you will adore these cookies. I had to make a lot of them and didn't have time so I didn't read any reviews. That was not really necessary at all. The only thing to mention is that putting the fork in water before pressing on the cookie helps a lot. And for some reason my filling was a bit dry so I had to add more cream. But the amount of filling was just perfect! Like everything else as well. Extremely delicious cookies!

Mexican Rice II

Grandma's Green Bean Casserole

I just made this for our Easter dinner. I made several changes based on other reviewers comments. Sauteed the finely chopped onions in a tblsp of butter slowly until they were starting to brown nicely--about 10 min. Then added a couple of cloves of finely minced garlic simmered for about 5 minutes. Added in sour cream, sugar 1/2 tsp salt and fresh cracked pepper to taste. Stirred in fresh steamed green beans, all the cheese and some french fried onions. Stuffed this into my round casserole dish and topped with more onions. From the quick taste test I did on the sauce this should be spectacular! Also making scalloped potatoes and Alton Brown's Ham with bourbon, gingersnap, mustard and brown sugar crust. Can't wait! Pecan Pie V from Allrecipes for dessert. Mine and hubby's mouth already watering.

Orange Chicken Stir Fry

This was pretty good but, of course, I changed it for our tastes. I added 1 tblsp ginger paste, 1 tsp red pepper flakes and I forgot to buy fresh garlic at the store so I used 1-2 tsp garlic powder. I did add the 1 tsp salt but would omit that next time as it was just a squeak too salty for us. I topped this over rice noodles with honey roasted peanuts and coconut flakes. Very Good!

Roast Leg of Lamb with Rosemary
