Super Bowl Bites

Whatever you do, do NOT use whole wheat rolls to make these. I did and it was horrible. The wheat taste was overpowering after baking and we had to throw them away.

These were ok. Not as good as I'd hoped they would be. The kids and hubby did NOT like them at all, so I have lots leftover. I'll add them to my baked beans and call it a day.

Cuban Black Beans II

I'm not a picky person. These don't taste like the black beans I had all the time when I lived in Miami. These are very sweet, which I don't like when it comes to black beans. I don't like throwing food away, so I'm going to add hot sausage to it and hope that makes the taste better. 8/12/06 - UPDATE: I crumbled up some Jimmy Dean Hot sausage, browned it, and added it to these beans. WOW. huge difference in taste. It was actually good after that.

Red, White, and Blueberry Cheesecake Pie

This pie is AWESOME! Not only does it have a unique crust, I didnt have ONE person at the 4th BBQ who didnt like it. I made two more the next day: one for my husband and one for him to take to work. Needless to say, they devoured it. As long as you make the recipe exactly as it reads, it will come out perfect. Happy Eating!

Ultimate Twice Baked Potatoes

Ham and Pineapple Dinner

I added some shredded carrots and diced up a jalepeno to add. That made it PERFECT because otherwise it would have been too sweet. It gave it a bite (but one my 2 year old could handle) and the sauce toned down the jalepeno. The sauce is pretty thick but still good. We had it over white rice. I only had 3/4 cup of pineapple juice, so I added apple juice to make it the right amount.

Dee's Roast Pork for Tacos

I made this in a foil bag in the oven because I forgot to throw it in the crockpot in time. I added 1/4 cup water so it would stay moist and it did. It was sooo good. I spread butter on one side of the corn tortillas and warmed them till crispy. then set out the meat, lettuce, cheese and sour cream. It didn't even need pico de gallo! I will be making this often! Today we used the leftovers in some cuban black beans and rice for lunch. yum!

I like it spicy but the folks I live with (kids and hubby) didn't, so I added 1/4 c Miracle Whip and 2 T sugar. It was still very spicy, but more bearable for them. You can't taste the sugar or miracle whip. I served it over spaghetti.

Awesome Slow Cooker Pot Roast

I added carrots and potatoes to the bottom of the pot and put the meat on top. mixed the sauce together and poured that on. My current crockpot is small and it was completely full. The potatoes added starch to the sauce and made it just the right consistancy - not too thin. My husband likes to eat his as a sandwich on crusty bread.

Dry Rub for Ribs

I used it today for our pork steaks and OMG, it was SOOO yummy. It kept the steaks juicy and was perfect. I did like all the suggestions said and added dried onion and some red pepper. I let it sit in the fridge for 5.5 hours. My husband was raving about it and even my "no, I'll wait and eat pizza at the party" son ate some. I'll be making this OFTEN. I put it in the blender and mixed it all together so I could put it in a seasoning jar. Makes it easier to apply and store.

Salisbury Steak

My daughter loved this, and she's the pickest eater I've ever met. However for myself, husband and 11 year old son, it was waaaay too sweet. I think next time, instead of adding ketchup, I will add brown gravy (canned).
