Amazingly Easy Irish Soda Bread

Really good, especially right out of the oven with some butter. I had to substitute fat free yogurt for the buttermilk because that's what I had and I wonder if that wasn't what contributed to a slightly thicker bottom. I followed other reviewer's suggestions and turned the heat down and cooked for almost one hour. It turned out perfectly done.

Sweet Potato Bread II

First, I halved the recipe. Substitutions made include: 1 cup whole wheat and 3/4 cup all-purpose, 1/2 cup applesauce for the oil, 1 egg-beater cup instead of two eggs, and used 1/2 cup splenda/sugar baking mix instead of all the sugar. Also added dried cranberries and did not peel the sweet potatoes. It turned out wonderfully, at just one hour exactly. A little oatmeal and sugar sprinkled on top, beautiful!

Chicken Cordon Bleu Bites

I tried serving it w/ spaghetti, with a creamy sauce to dip in, by themselves, and with ketchup. No one liked it except me. Oh well, back to the drawing board.

sorry, but neither the kids nor the husband liked it. I tried it w/ regular, bbq, and sour cream and onion chips. None were eaten past the 1st bite.

Easy Add-In Macaroni and Cheese

such an easy, BUDGET FRIENDLY, and yummy comfort casserole. I added diced chicken breast sauteed with halved cherry tomatoes, garlic and onions. I used fat free cream of chicken and low fat sour cream. I didn't have any crackers, but it was still good.

Honey Glazed Ham

Made this yesterday for my son's 21st birthday. As suggested by someone, I let it marinate over night in the glaze, then only needed to baste 3 times once in the oven. Used the leftover glaze for an orange sauce, served with corn on the cob and buttermilk biscuits. Everybody was raving about how good this was. Our guests asked, when I'll cook this again. For dessert I had pumpkin pie and the Warm Apple Buttermilk Custard Pie (both recipes from this site). Son, daugther, guests, all were happy. Guests even took leftovers home to enjoy another bite today. Thanks also to other reviewers for their input. Will make again.

Seven Layer Tortilla Pie

This is soooo goood! Thank you so much for this recipe. We just had it for supper. My daughter's girlfriend, who ate with us, never had anything like that, she immediatelly asked for the recipe, so she could show her mom. Since I couldn't get pinto beans where I live, I just used Kidney beans and white beans, mixed and mashed them together with the salsa for one layer. I also added hamburger with Taco seasoning for another layer, mixed with sliced red peppers, the tomatoes and corn. Also, as suggested by another reviewer, added sliced avocado on top. There are endless possibilites to this recipe. Next time, I'll just make the tortillas myself, since the ones I can buy here in Germany are very small. Thanks again for a wonderful basic. Will be a regular in our home.

Mango Muffins

Happy Holidays to everybody! Just made this for tonight. These are so good! Will be a regular in our house. We ate one right out of the oven and my daughter didn't wanna stop. Since my mangos were a little overripe, I had to puree them, so there was a lot of juice in it. To compensate, I only used 2 eggs, 1/3 cup of the oil, added 1/3 cup coconut milk, and mixed in approx. 1 cup of coconut flakes. I always have problems with sticking paper-cups, when making muffins with fruit in it, so I just grease the muffin pan and cover with coconut flakes. Muffins just fall out the pan, don't stick nor pull apart.

Beef-Stuffed Squash

My daughter likes this recipe. I discovered this recipe about 4 weeks ago and tried it with butternut squash, can't find no acorn here in Germany. Altered it just a little bit to what's been on hand, used a Russian dressing from this site and holy cow, this was so good. First time in my life that I tried to cook anything with pumpkin or squash except for pie and muffins. Had to make it weekly since then. My son just brings home his friends for this, and all are in heaven. My daughter wanted it for her 18th birthday party last week as main dish. It even inspired her to try it with small Hokkaidos, mixing her own filling this weekend. Thanks so much for a heavenly recipe. It's already on our favorites list.

Octoberfest German Potato Salad

The recipe longs for more mayonnaise and less vinegar. Anyway it has nothing to do with Oktoberfest. I southern Germany potatoe salad is always made with oil and vinegar and never with mayonnaise. The varieties with mayo are only found in the northern parts of aou country.

Fleischkuechle (Flesh-Keek-Luh)

The recipe has nothing to do with german Fleischkuechle except the use of meat. Fleischkuechle are oval, abou 1 inch thick, have a weight of 2.2 or 4.5 ounces. They are never deep fried but fried in a pan. Besides in Germany we don't use flour for the dough but rolls, two or three days old, soaked in milk or water.
