Soft Sugar Cookies IV

Very soft and good. They were a touch salty for my tatse so next time I'll just put 1/2 a tsp of salt instead of 1 tsp. I also put 1 3/4 vanilla extract and 1/4 tsp almond extract instead of the 2 tsp of vanilla just to switch up the flavor a bit and it made the cookies even better.

Award Winning Soft Chocolate Chip Cookies

These cookies are delicious and extremely soft. They stay soft for days and days too when kept in a container. I added some vanilla as suggested by other reviewers. If you follow the recipe and use common sense, you can't screw this up......

Cranberry Pistachio Biscotti

Amazingly good; they disappeared very very very quickly. It is key to wet your hands, or the dough will stick. But do not otherwise worry about the dough being too sticky: it does turn out fine after baking.

Kellogg's® Chocolate Scotcheroos

If you find these too sweet, you can omit the corn syrp and sugar altogether. You can simply microwave the PB and butterscotch chips together, stirring until smooth. Then do the same with the choc chips (I suggest semi-sweet) and top them. I used to do it this way to make them on my lunch break at work. I like to eat them warm with a spoon :)

Leek and Fennel Soup

I made this soup, but I added more potatoes, and a bit of half and half and sprinkled some Parmesan cheese to thicken it. Also, I put about 1/2 of the soup into a blender to thicken the broth. Just a personal preference for a creamier version.

Pumpkin Gingerbread

Loved it! And tried it with a few changes---like many others, dropped sugar to 2 cups (one cup white, one cup brown), but plus 1/2 cup of molasses. Substituted 1 cup buckwheat flour for 1 cup of the regular flour. Added small amount candied orange peel for extra oomph. Substituted 1/3 cup of applesauce + 2/3 cup oil, rather than 1 full cup oil. All turned out wonderfully well and was very very well received by guests.

I have a solution to a lot of bakers who felt that the frangipane (almond filling) was not almondy enough. Toast the almond before grinding them. The flavors of the almonds will reveal themselves.

Iced Pumpkin Cookies

I don't really know if they are the best as it was my first attempt of Pumpkin Cookies... but they are so tasty and moist that I wouldn't change the recipe for an other one. Even my husband who really don't like pumpkin ate all his part and try to eat mine... I usually froze my pumpkin raw. I peel it and cut the flesh in cube. As we don't have canned pumpkin puree in France, I used my frozen cubes. I let them in the fridge all the night and then I microwaved them 9 min. I separated the flesh from the water (press the pumpkin well to extract all the water) and pureed the flesh in my blender. And it worked perfectly.

Parmesan Chicken

I've made this recipe for the first time yesterday. It was a hit! Healthy, moist and delicious! The taste was very good and here in France you know that we like cheese so it was perfect. I used garlic and olive oil seasonned bread crumbs. I put in the mixture more parmesan than bread and used frozen basilic instead or dry. As suggest in other reviews, I dipped in egg and crumbs mixture twice. And I bake it 30 minute in the oven. I served it with Tagliatelle and a tomato and basilic sauce.

Truck-Stop Buttermilk Pancakes

With this recipe, you could never failled! I used less fat milk and lemon instead of buttermilk and add also a tablespoon of flour. They were fluffy and delicious like always.

Florentine Artichoke Dip

I thought they were going to come out a bit weird because adding the flour in the end made it seem as if it would be too dry BUT they came out perfect! I just sent my husband to work with a huge plater for his coworkers....I am can't wait to hear the wonderful comments :)

A-Number-1 Banana Cake

A friend of mine gave me this recipe. I tried it yesterday for the first time and bring it to work today. As I didn't have buttermilk, I made it with milk and lemon (instead of vinegar). It was perfect!!! All my collegues (all French) was surprised by the texture and the taste... They simply love it!!! They told me that I could try my american treats on them every time I want ;-) Thanks!!!
