Developed, defined and refined in France, haute cuisine marks the pinnacle of fine dining. Yet the French, thrilling to the familiar as well as the fancy, also love their casual bistros, where classic dishes (like coq au vin, beef burgundy, and moules or steak frites) are offered at reasonable prices. Indeed, the French possess a high food IQ. Not content to just “shovel it in,” the French take personal and national pride in being well informed about what they eat and drink, where the ingredients come from and how they are produced. Food in France is a complete cultural phenomenon. The French not only invented the restaurant and haute cuisine but also the literary tradition that champions them. The roots of today’s food magazines and celebrity chefs go back to France. Indeed, from hors d’oeuvres to entrees, we all speak the language of French cuisine.

If you find these too sweet, you can omit the corn syrp and sugar altogether. You can simply microwave the PB and butterscotch chips together, stirring until smooth. Then do the same with the choc chips (I suggest semi-sweet) and top them. I used to do it this way to make them on my lunch break at work. I like to eat them warm with a spoon :)

Leek and Fennel Soup

I made this soup, but I added more potatoes, and a bit of half and half and sprinkled some Parmesan cheese to thicken it. Also, I put about 1/2 of the soup into a blender to thicken the broth. Just a personal preference for a creamier version.
