Soft Oatmeal Cookies

These cookies were really good! I did add a bit more cinnamon to the batter and only used half of the sugar. The cookies are still sweet enough though... am even thinking to reduce the sugar a bit more next time. I baked them until the edges of the cookies were crispy and the inside was still soft. Nearly all gone now!

Good Old Fashioned Pancakes

These are excellent! I followed the recipe the first time I made them except that I omitted the egg as I was only making one portion and didn't want to get an eighth of an egg! But the pancakes turned out really good anyway. The second time I made them I used half oatmeal/half flour in the batter which gives them a nicer texture I think.

Homemade Black Bean Veggie Burgers

These were superb! I didn't have any onion so I used onion powder instead. To make up for the dryness of the powder I added a tablespoon of salsa. They turned out really well! Grilled them for 5 minutes on each side- really yummy! Will make again! UPDATE: I have now made this again and have simplified the process. I just throw the beans, the roughly chopped pepper, onion and garlic into a bowl and blend with my stick blender until quite smooth. Then I just mix in the seasoning in the same bowl, add the egg and the breadcrumbs and stir. Then I let it stand for about 10 min so that the breadcrumb have time to actually soak up the excessive moisture. So easy and yummy! Will make now every week...
