Austria’s culture and traditions are greatly informed by its history as the center of the Austro-Hungarian Empire, as well as its annexation, post World War I, by Germany. Geographical proximity to Germany, Italy and Hungary has been of great influence in the Austrian kitchen. The most famous Austrian dish has to be Wiener schnitzel: a meat cutlet, normally veal, coated with egg and breadcrumbs and pan-fried. Wiener schnitzel is named after Vienna’s Capital city Vienna (Wien) and is commonly served with dumplings and gravy. Tafelspitz (boiled beef) and pork medallions in garlic sauce are two other favorite main courses, while Apfelstrudel and Kaiserschmarrn (shredded pancakes with fruit compote) are among the nation’s favorite desserts. Vienna is often called the ‘Coffee Capital of the World,’ having given birth to the concept of the ‘coffee house,’ as well as popularizing the concept of mixing cream and sugar to the coffee.

Empire State Muffins

I made these today but didn't have any walnuts or pecans so left them out. I also had 2 cups of carrots and only 1 of apple. These were so good! The outside was crispy which we liked a lot! The inside is so moist. Overall, the muffins are very tasty.

Bacon Cheese Muffins

I just made these and they turned out okay. They made slightly more than 12 muffins in my tins (I ended up with 15). I think the next time I made these muffins I will add more cheese and more bacon than is called for.

Never Fail Applesauce Spice Cake

A delicious cake! Moist, nice spice combination, and the crunchy nuts are a wonderul addition. I left out the suggested topping and applied regular cream cheese frosting. Yummy!
