Lovely, tender muffins!! I loved the slight "hint" of oatmeal flavor and the oatmeal gave it a wonderful, light chew. They were not overly sweet, which I really appreciate. I could see substituting brown sugar for some or all of the white sugar called for; that would be a great taste. Overall, excellent muffins that will stay in my muffin rotation! Cinnamon Swirl Bundt Coffee Cake

I had such a "taste" for cinnamon coffee cake when I made this; maybe I set my sights too high! I can say that this had a wonderful "crumb" and was nicely moist. However, the "swirl" was almost non-existent; I would recommend maybe doubling it. Overall, a nice cake, but not what I was looking for. Thank you, Ruth, for sharing this!

Oatmeal Pancakes II

Scrumptious, divine, delectable...the list goes on and on! These are wonderful! I made exactly as written and they resulted in a lovely fluffy and very gratifying pancake. I love the fact that they have just a hint of oatmeal flavor! Thank you so much for this champion of pancakes!!
