Baked Ziti I

This was really easy, and pretty good. I made it for a potluck and it was all gone at the end. It uses readily avaiable ingredients.

Italian Summer Squash Polenta Bake

Delicious... And you could turn it into a south of the border version.. Use cheddar instead of parmesan, salsa or taco sauce instead of spaghetti sauce, and add some mexican spices to the chicken! I'm going to try it this way today!

Oatmeal Toffee Cookies

I really like these. They have a yummy, chewy texture and the great flavor of toffee. I used an 8 oz. bag of toffee bits. I also baked at 350 for 8.5 minutes, and they were perfect. Used 1/2 cup of whole wheat pastry flour.

Grilled Fish Steaks

We all loved this. It was a hit with the kids, too. I love the texture and flavor of halibut, and simply grilled like this, it's even better.

Goat Cheese and Arugula over Penne

This was really good. I wanted the arugula to wilt down a lot, so I drained the boiling pasta water over it, in a colander. It worked very well. I don't love the strong flavor of arugula, so I liked this recipe, with other flavors. I did use feta because I don't like goat cheese. I also used whole wheat penne.

Couscous, Cranberry, and Feta Salad

Ths is a "first cousin" to the classic Tabouleh... Excellent. I added some chopped walnuts and a little lemon juice. Great side dish for moorish style chicken kebabs!

Red Velvet Cake

omg. what a DISASTER !!! i don't know what happened. everything was going great till the part where I had to mix the flower with the buttermilk.... it became all lumpy and ended up like dough. i didnt know if that was right or not so i continued with the rest ..... it ended up taking an hour in the oven and still it wasn't cooked well... so I gave up. when i actually cut a piece, the dough lumps where still everywhere. grrrrrrr. I really had high expectations for this recipe. I dont know where I went wrong. maybe with the buttermilk? do you guys buy it ready-made? i found a recipe for it and made it myself.

Ultimate Twice Baked Potatoes

I love twice baked potatoes for two reasons, 1. you don't have to be exact with what you put in and 2. you can make these in advance and refridge. or freeze! Yum.. the bacon in this recipe really make these delicious. I used turkey bacon and it was great!

Portuguese Custard Tarts - Pasteis de Nata

I grew up eating these custards in Macau (a Portuguese colony) so i came in as a tough critique. This was my first time however actually make this, for some reason i though it would be really hard, but i was amazed how easy it was. My whole family loved them, they were gone in several hours. My only suggestion is to use the paper muffin liners. I sprayed half my pan and used the muffin liners for the other half and the greased ones stuck pretty bad, but the paper was great. I also used trader Joes puff pastry and just cut squares for ease... They looked a little different than the authentic ones, but the taste is excellent. I will definitely make again. Oh.. I also used a half tsp of vanilla instead of the vanilla bean.

Tomato Basil Salmon
