Set in the Mediterranean Sea between Sicily and Northern Africa, the three Maltese Islands, Comino, Malta and Gozo, boast 7,000 years of rich history. Maltese cuisine is a blend of flavors and culinary techniques brought by Phoenicians, Romans, Saracens, Barbary pirates, Crusaders, Ottoman Turks, French, and British. Seafood is central to the Maltese diet, and a walk through the fish markets show the abundance available: bass, stone fish, grouper, white bream, trill, swordfish, tuna, octopus, squid, and the famed Lampuka (dolphin fish). Maltese food is traditionally sun-drenched, seasonal and rustic, with goat and sheep milk cheeses, olives, almonds, honey, wine, tomatoes, and capers. A romantic island dinner might include wine and Bigilla (a rich pate of broad beans, garlic and olive oil), hobz biz-zejt (bread, rubbed with olive oil and tomatoes with tuna, capers, onion, garlic and capers), and pastizzi (savory filled pastries).

Gourmet Mushroom Risotto

Baked Lamb Chops

Great recipe. I used pork chops instead of lamb chops and marinated them in egg mixture for about an hour. They came out really tender and flavourful

Tangy Honey Glazed Ham

This glaze was simple and really added what I was looking for. I advise everyone though, steam the ham first then finish it in the oven with the glaze. You will avoid a salty ham this way.
