Rich, dense, sweet and chocolaty, this pie has it all, and is a snap to whip up. All the ingredients for the filling go into one bowl: eggs, butter, sugar, flour, semisweet chocolate and pecans. Then simply stir it up, pour it into the crust, and bake it.

Everyone will think there's apple in this delicious pie, but there really isn't. Peeled, sliced zucchini are sauteed in lemon juice until just tender, and then it 's combined with all the usual apple pie fixings: sugar, cinnamon, brown sugar, nutmeg and flour. The filling is piled into a pastry crust, dotted with butter and topped with a second crust. It bakes for about 40 minutes.

Sweetened condensed milk gives this pie 's sweet potato filling a sweet creaminess, and grated orange rind adds a pleasant texture and citrus bite to the finished pie. This pie is also drizzled with a wonderful syrup of brown sugar, pecans and maple flavoring, and then it 's baked until glazed and wonderful.

These are THE BEST cookies I ever made! They are a great hit with my family and friends. One variation is to add 1 cup of walnuts and 3/4 cup of dried cranberries in place of the apricots and almonds.
