Pumpkin Pie I

This is the only pumpkin pie recipe I've ever used. It's been in the family for at least sixty years! Since, in our family, one pie is never enough, I like to triple the filling recipe and divide it into two pie shells, since, as my Mom always says, "No body likes a skimpy pie!" (Of course, this will add a few minutes to the baking time, too.)

This is a traditional minestrone complete with leeks and zucchini in a tomato soup base with cannellini beans and pasta. Serve with grated Parmesan cheese.

This salad is a snap to make and looks and tastes very Italian. Cheese tortellini are cooked al dente and tossed with spinach, Parmesan cheese, cherry tomatoes, sliced black olives, and a prepared Italian dressing. Great barbecue salad.

Black beans, salsa, veggie broth and cumin are tossed into the blender. Transfer to a pot and heat until warm and bubbly. Serve with a dollop of sour cream and a sprinkling of green onion. 

Potato Cheese Soup

Vegetable broth is the base for this wonderful soup. And yes, there are lots of potatoes. Swiss cheese is added at the last minute, so that it gently melts into this hearty soup. Very, very good.

This hummus comes with raves attached to it. What we like is that everything goes into the food processor and is swooshed into a fabulous consistency. Only the Greek olives and paprika, sprinkled on the top are done by hand.

Layers of potatoes and onion baked with a simple cheese sauce make a hearty and comforting casserole. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

Whipped Frosting I

A light tasting whipped frosting suitable for filling a rolled cake or whoopee pies. Great on angel food cake. Never fails as long as you don't let it cool uncovered or a skin will form on the paste.
