Egg Foo Young

When I lived in Hawaii I often bought dinner from the local Chinese cafe and they always offered hot mustard mixed with soy sauce for the egg foo young. I still use it to this day on egg foo young it gives it that extra zing.

Red Beans and Rice

This is my 8 yr-old son's favorite dish. I use a 'healthy' turkey sausage and sometimes add spices and garlic. It's always a winner. We top with sour cream and cheese. It's more like a sausage chili and he always asks for more.

Mafioso Chocolate Cake

This cake was absolutley AMAZING! I am normaly very critical of my cooking but even I loved it as did my fiance! I didn't do the icing as I just couldnt be bothered to be perectly honest, but I'm atually glad I DIDN'T use it as I think it would have made it too sickly. It was almost like a souflee it was so soft!

Goat Cheese Stuffed Lamb Burgers

Brilliant! I used less salt like 'Debbie L' suggested too, and i also made the middle a bidder space so it was easier to spoon in the cheese mix and then fold it over and flatten ready to grill. My other half LOVED these too, and it's hard to get him to like anything!

i too left out the salt way to much,wasnt sure what heavy cream was (im from the uk)so used double cream???and also wasnt sure about can of tomato sauce so used tomato puree??? the sauce looked a bit thick but it was very tasty.

Gourmet Mushroom Risotto

OMG, made this for a dinner party tonight and was very, very well recieved. I was with an italian guy for 3 years and this was above standard to many or his own risotto recipes! I think the ammount for 6 mentioned is really, honestly enough for 4 ppl. I lowered it to 5 and it only just fed us 4. I lessened the mushrooms by 100 grams as I also added chicken, but without the chicken I think the ammount of mushrooms stated is fine, and not over powering at all. Upon frying the mushrooms, also added 4 cloves of garlic. I messed up too and added the wine to the stock instead of straight into the rice, but it tasted fine nonetheless. The parmesan wasn't over powering at all, and the chives added a lovely change to the colour which would have otherwise been bland. All in all, we say 10 out of ten for the basic recipe, perfect without any changes!

Creamy Potato and Leek Soup

I did not like the texture of this soup. I had to add an extra can of broth to make it work. It tasted OK when topped with crispy onions. I used the cream and it was a bit cloying. I will try with milk next time. Also added a lot of seasoning and an onion.
