Cornbread II

Reviewed: Nov. 28, 2008
This cornbread is great. I love the addition of instant potatoes. Never thought of that before. I wanted a cornbread that wasn't sweet and this one fit the bill. The only change I made was I forgot to buy baking powder. Oops. But I had some self-rising flour. I was skeptical, but IT WORKED. I just needed to make a pan of cornbread to use for my Thanksgiving dressing. This one was perfect.

Pecan Pie VII

Reviewed: Nov. 28, 2008
There is no karo syrup where I live. I'm from Texas but have lived in Scotland for 10 years. There is no Thanksgiving here either but there IS in my house. I love pecan pie but never have it anymore. This year I just wanted to be traditional so I searched until I found this recipe. It's fantastic. You've just gotta try it. I never knew you could make a pecan pie without corn syrup. But YOU CAN and it's better than I ever imagined. The only thing I did different is I accidentally bought dark brown sugar so I just used 3/4 dark and 1/4 white to tone it down a bit. Worked a treat.

Sweet Potato Pie I

Reviewed: Nov. 28, 2008
There is no canned pumpkin where I live. I'm from Texas but have lived in Scotland for 10 years. There is no Thanksgiving here either but there IS in my house. I love pumpkin pie but never have it anymore. This year I just wanted to be traditional so I searched until I found this recipe. It's fantastic. You've just gotta try it. I made the changes advised by a previous review. Condensed milk and half brown half white sugar. YUM YUM!!! Better than pumpkin pie. No more homesickness for me.

Easy Indian Butter Chicken

Reviewed: Nov. 28, 2008
Wow! This is the closest I have ever gotten to the Makhani chicken at my favorite Indian restaurant. Thank You so much-I know I will be making this once a week. Next time I will reduce the salt a bit, but it is wonderful

Butter Cake

Reviewed: Nov. 28, 2008
This is the best butter cake recipe I've ever tasted! One reviewer said it was coarse textured, but it is not. If you want a finer texture to a cake, use cake flour or pastry flour. Also very important, bake it for 40 minutes, not 50 or 55 minutes! I made this for my 2nd wedding anniversary with a vanilla buttercream frosting and strawberry filling and oh! What a hit it was! Thank you for sharing!

Wicked Good Veggie Chili

Reviewed: Oct. 26, 2008
I used black beans because that I had them on hand. I also didn't use the cilantro or the green onions-just sour cream and cheddar. It tasted WONDERFUL! This is my first time making veggie chili (I've just started eating veggie) and it is great-I don't miss the meat at all! Thank You!

Gaye's Microwave Fudge

Reviewed: Oct. 26, 2008
This was wonderfully easy to put together-brilliant for satisfying a chocolate craving without having to run out to the shops! I would recommend using the best cocoa powder you can find, because it will really improve the flavor! Thank you so much for this cheap and easy recipe!

Spinach Enchiladas

Reviewed: Oct. 26, 2008
I had really high hopes for this recipe, but it seemed as if something was missing from the filling. In saying that I gave it 4 stars because I think it has potential, it just needs to be spiced up a little-oh, and I do NOT recommend using store bought enchilada sauce-I did and it tasted awful! The next time I make this I am going to use cottage cheese instead of ricotta and make one of the enchilada sauce recipes from this site.

Hummus III

Reviewed: Oct. 26, 2008
This is the BEST tasting hummus I have ever made-It makes store bought seem inedible! Make sure you use really good quality beans because I have found that makes a big difference in the taste, and if it seems a little thick I sometimes add some of the liquid from the can of beans. Wonderful with pita bread or pita chips for a healthy high fiber snack-and it is so healthy for you that you can eat all you want and not feel guilty!

Delicious Black Bean Burritos

Reviewed: Oct. 26, 2008
This recipe was alright, but I wasn't sure whether to use fresh or canned jalepenos-I used fresh and that was all I could taste in the filling. I think the recipe has a lot of potential-I just have to adjust it to my tastes. I think next time I will add monterey jack cheese to the filling, more cream cheese and use diced green chiles, because I love their flavor. Thank you so much for submitting it- it was a great starting point in my search for a tasty vegetarian burrito filling!

Brick-Oven Pizza (Brooklyn Style)

Reviewed: Oct. 26, 2008
This is the BEST pizza dough I have ever made. It came out thin and crispy and foldable-just like in the NY style pizza shops! I make it every week-I make it with homemade marinara sauce, picante provelone cheese from the deli and top it with garlic salt-you will never order delivery again!

Scottish Shortbread IV

Reviewed: Sep. 19, 2008
Burn's Night in Scotland is January 25th and celebrates the national poet, Robbert Burns. The Scots celebrate by drinking loads and eating haggis. I brought this shortbread to the last Burn's Night celebration and got rave reviews!
