Smoked Fish Pie

This recipe is a strong family favourite. It's great to warm you up on cold winter evenings, or in the summer served with a fresh green salad. You can use Cheddar instead of Red Leicester if you prefer. A plain bechamel sauce is also tasty, but add a little more nutmeg. If sauce making is scary, this dish works just as well with a tin of smoked fish chowder or packet sauce.

In the North of Ireland, locals treat themselves to this enormous breakfast on the weekends. The fried breads make it unique. Soda bread and potato farls are cooked in reserved bacon fat making them golden and crispy. Served alongside Irish bacon, sausage, black pudding, tomato and egg - you won't need to eat again for the rest of the day!

Half of this pie 's strawberries are arranged in a baked pastry shell, and the other half are crushed and cooked up with sugar, water and cornstarch until thick and bubbly. This lovely glaze is then poured over the whole berries in the pastry shell. Chill this pie for several hours and serve it with mounds of whipped cream.
