Jumbo Fluffy Walnut Apple Muffins

Reviewed on Jun. 25, 2008 by Jennifer
Wow! These are delicious! I followed the recipe measurements exactly and the only small change was to dice the apple into smallish chunks instead of slicing. I used a regular muffin tray instead of jumbo and I'm taking some of these in to work tomorrow to share as they are so delicious. Fantastic recipe. Thanks

Garlic Pasta with Prawns

Reviewed on Jun. 14, 2008 by Jennifer
I love this recipeIt's great as it is but can easily adapted too. My kids don't like prawns much so I make this and put half in a tub in the fridge. Next day it's delicious as a cold pasta salad for lunch. Also, a quick chamge I sometimes make to this is after draining the pasta and returning to the pan, stir in a coule of handfuls of fresh rocket or watercress. Stir in and return the lid to the pan then continue with the recipe instuctions. It adds a bit of colour and is delicious. Thanks for this easy recipe!

Buttery Lemon Spinach

Reviewed on Jun. 2, 2008 by Jennifer
To be honest I've previously avoided spinach as a side dish as I find it bland and uninspiring but this recipe changed all that. Loved the zingy flavour and the fact that the garlic is tasty rather than overpowering. My kids tried it but weren't keen but I loved it. I served it as a last minute side dish to go with a chicken and bacon lattice pie and some buttered baby Jersey Royal potatoes. The spinach kept the whole meal light and suprisingly was delicious with the pie crust. Thanks
