Annie's Fruit Salsa and Cinnamon Chips

YUMMY! I love that you can make it with any fruit combination - I used apples, pineapple, kiwi, and strawberries! It was incredible. I took the other reviewer's advice for the chips and just sprayed both sides of the tortilla with pam, sliced it in about 12 pieces, and threw the pieces into a gallon bag with the cinnamon sugar mixture. One tip: Don't cook the chips too long! I thought I had to cook them until they were a little hard, but then they were overdone. The next batch I cooked until they were barely golden brown, took them out of the oven and they continued to harden on their own. They turned out perfect.

Caramel Bars

Amazing! Delicious! A big hit at a going away party. The only change I would make is using an entire bag of caramels rather than just 32 individuals, but I really like caramel!

Easy Quiche

This is definitely easy, but not my favorite. I made it for a baby shower and the guests liked it, but something about it left a bad aftertaste in my mouth. I might try again, but like real quiche better.

Spinach Quiche

This is great because it's so easy to make and so easy to alter to exactly what you want. Plus, you can make it fairly healthy by using egg beaters, fat free half and half, and definitely only need a 1/4 c or less of butter to brown the garlic. Also, I used fresh spinach, fresh mushrooms, and added red peppers, orange peppers, and green onion. If you add just a little extra milk/half and half and egg, you can definitely get 2 pies out of this recipe. Yummy.

Ono Butter Mochi

Made this for a New Year's party and at first I thought it was ok, but it kept getting better and better. Definitely something to make at least a day beforehand because the flavors keep enhancing. Plus, all the party goers from the Pacific (both Hawaii and the Philippines) couldn't get enough. The only thing I would change is adding a little more coconut.

Cheese Souffles

You need a few bowls for this but MAN is it worth it! I used Butter baby Swiss I got from FIGI's and ohhhhhh it's perfect! Just remember to carefully temper your egg yolks before adding to the hot mixture and it's an easy success. Everyone loved it. I am going to do it again, this time, half cheddar, half Swiss. or perhaps Butterkase MMM! Thanks for an easy and great recipe. I have enver made a souffle' before and this gives me confidence to try more! Thank you!!!

Tiramisu Layer Cake

Possibly the best dessert I've ever made! I wasn't even sure I liked tiramisu (I was making it for a visiting friend), but it was wonderful. I followed other reviewers' recommendations and doubled the kahlua and coffee amounts. I also made 2 coffee layers and 1 white layer. I doubled the filling and discovered my love for mascarpone. Along with the incredible taste and moistness, this cake also looked gorgeous!

Butterscotch Bread Pudding

So easy, so good! Used a crusty Italian bread, cut into chunks, and put it into the pan. I mixed all the other ingredients together and then poured over the bread. I let it sit for about 30 minutes and then baked it. I went ahead and used the whole bag of chips and added rum soaked raisins. I used 2% milk and it still tasted really rich. I didn't have icecream on hand so I made a white chocolate brandy sauce to pour over (recipe on this site with the white chocolate cheesecake). It was absolutely delicious, but I think I liked it even better straight out of the fridge the next day.

Microwave Oven Peanut Brittle

I can't believe how good and easy this recipe was! I didn't think that it could turn out so crunchy since it was microwaved, but it's fantastic. I can't wait to try it with different nuts. With my 750W microwave I cooked it for 6 minutes the first time and 2:15 the second time. I also took the advice of other reviewers and used the 4 cup pyrex measuring cup - it made it super easy!
