Vanilla Glaze

I'm glad I read the reviews before making this. It meant that I was expecting to have to add more milk. I probably used 2 to 3 T to get the consistency I wanted. I accidentally added a full teaspoon of vanilla but I didn't think this made it too stongly flavoured. This is a beautiful glaze which sets perfectly and added the finishing touch to Nutmeg Feather Cake from this site. Thankyou Jamie.

Nutmeg Feather Cake

Out of necessity, I used all butter and did the vinegar in milk trick for the buttermilk. I baked this in a 10" bundt pan, which made the cooking time 5 to 10 minutes longer. Topped it with a vanilla glaze. The texture is as my husband put it, very fluffy, as he helped himself to a second slice. Thanks for a delicious cake Jayne.

Baked Leeks

This recipe gave me one of those why on earth didn't I think of that moments. I've been cooking cauliflower this way all my married life, it just never occurred to me to do it with leeks. I used just the white and pale green parts of the leeks as the dark green can be a bit bitter and tough. A big hit with my family. Thanks Stephstargirl.
