Dad's New Zealand Mince Stew

Good base for extra's, I also added diced carrot, corn & peas. Topped it with a cheddar mash, I think it needs the tangy taste from the cheese to cut the richness of the mince. I kept to the recipe other than that, don't think the pepper is overwhelming at all.

Truck-Stop Buttermilk Pancakes

Yum! These pancakes are delicious, exactly how I imagined a real American pancake should taste! My daughters both agree as does my husband. We're from the UK so these aren't typically the pancakes we get here, I will never make those boring flat ones again!

Lower Fat Banana Bread II

I used 3 bananas, used crushed pineapple instead of applesauce, and substituted pecans for the walnuts. Very tasty and extremely moist!

Summer Squash Casserole with Nuts

The onion needs to be sauteed or cooked with the squash first - too crunchy when put in raw. Otherwise, great recipe.
