Carrot Cake III

Wine and Dijon Marinated Pork Loin

Big Soft Ginger Cookies

Amazing recipe - I doubled it to get more cookies! In future I would add more ginger - my guests said they could taste the cinnamon but not the ginger.

Aunt Joyce's Chocolate Cake

Well, I had to make this cake when I saw the ingredients, it was just so unusual! It looked fantastic, tasted chocolatey (I used the cocoa powder and oil) but the texture was slightly rubbery. However it didn't detract much from the cake, nearly all my family loved it!

Old-Fashioned Chocolate Fudge

Wow. I followed this recipe exactly and it turned out perfect - even on an electric hob without a candy thermometer. Thanks to those other reviewers who gave tips about fudge-making. - couldn't have done it without you! Perfect consistency fudge, creamy delicious flavour and texture. The only reason I've not given this recipe 5 stars is because there is more detail required in the recipe, mainly with regard to the sugar crystals, timings and temperatures. Many thanks though - this should give my fiance enough energy as quick snacks throughout his triathlon this weekend!

Chocolate Frosting III

Well I made it just now to decorate two chocolate cakes. I had to add more milk than the 2tsb one reviewer suggested - just poured some in though so I don't know how much! It was a bit lumpy so I guess I should have sieved the icing sugar (?confectioners sugar in USA?). Otherwise, tasted delicious!

Easy Cheese and Garlic Scones

Having read other reviews, I added slightly more butter. They turned out amazingly well! Light and fluffy throughout. My fiance told me to make double quantities next time I made them! I'm making a third batch today and have followed the recipe exactly. I'll let you know how they come out...

Tangy Chicken Breasts

Very interesting taste, slightly acidic. Halved the recipe, baked in oven with marinade. My brother and fiance both enjoyed it very much - we added a slice of cheese to each fillet midway through baking. Served with brown rice and vegetables.

Savory Pork Chops

We both really enjoyed this recipe. IT was altered at the last minute, when I realised we'd run out of marmalade - I used mango chutney instead. It was delicious. I also baked the pork chops in the sauce, after frying them in the flour mixture. The meat was so tender when cooked this way. I will definitely be cooking this again!
