About me:
I am mum to two teenage girls one of whom wont eat anything green apart from peas and the other has been a committed vegetarian for 4 years.I also have a husband who thinks he hasn't been fed properly if there's no meat on his plate so a few cooking challenges there. I love cooking but wouldn't say I'm a natural cook I have to have a recipe in front of me. Recently I have become a little more experimental and stray a bit more from the original recipe.

Truck-Stop Buttermilk Pancakes

really amazing pancake recipe!!! really nice and soft and fluffy and yummy and crispy on the edges, and for the first time in my entire life i managed to toss it without it going on the floor...now thats a sign of a good pancake if ever i saw one!! I used gluten free flour and also used lemon juice and milk instead of the buttermilk, really really good! tomorrow i shall be trying the rest of the batter out on the whole family, i'm sure they'll love these pancakes as much as me :D

Victoria Sponge Cake

made this with gluten free flour and it was totally yummy, i also put jam and butter icing in the middle and lemony butter icing on the top, it went down very very well with the family thats for sure! :D

Fruity Curry Chicken Salad

I made this for dinner then took the leftovers to work for lunch. I used a Granny Smith apple and didn't measure anything except the curry powder. I probably used less mayo than specified this way. This will be making regular appearances in my lunch box this summer. Thank you.
