Perfect meal, didn't think I'd like it since I'm picky and only like three things in the recipe but I loved it! didn't use parmasan cheese though (spelled wrong) but only cause tbe b/f wouldnt buy it cause he doesnt like it! and we don't get monteray jack cheese so had to settle with mozzerella! was still great though!

This would also work really well with chicken breast sliced into strips

Fresh California Salsa

Reviewed: Jun. 29, 2006
This is great. I scaled down a bit using 3 tomatoes, 1 clove of garlic (don't care for strong raw garlic taste), 1/4 red onion for colour, 1 jalapeno, kept the lime juice the same and added 1/2 tsp sweetener for contrast. Also added a pinch of cumin. Would try with finely diced deseeded cucmber next time. Thank you for sharing!

This is gorgeous! Have made it to dress an asparagus appetizer, found it too creamy when i first tasted it then realised i'd missed the lemon juice so added that and it was perfect!

Ashley's Chicken Katsu with Tonkatsu Sauce

Reviewed: Jun. 13, 2006
Excellent, realy simple recipe and delightfuly different. I crushed some sliced almonds instead of the Panko bread crumbs, as I could not get hold of them. I halved the sauce, and, as a reviewers here disliked it, I left it off the chicken and put it in a bowl in the middle of the table so everyone could just put a little on their plate and try it first, no fear though, went down a treat, and the bowl was soon empty. Definately make this one again.

Kung Pao Chicken

This was awesome. Thnx a million for this recipie. Needed to double up on the sauce as everyone advised and made 2 adjustments. Used Cider Vinegar instead of distilled and as we had no white wine in I had to use vermouth instead of that.

Lemon Chicken III

Easy and super tasty tastebud zapper... Made it with chicken fillets instead of the breast halves and was more than delighted with the result. Did find the 'sauce' stayed like a juice and not thick at all but I made plenty of rice which more than happily soaked it all up.

Delicious Apple Sauce

Reviewed: Mar. 4, 2006
Excellent as a starting point for the apple sauce. I did not need to add any sugar, although I suppose it depends on which apples you use whether you need it or not, scaled it for 3 and halved the cinamon. Overall though EXCELLENT.

Black Bean And Corn Salad I

Reviewed: Jan. 6, 2006
Cheating a bit rating this recipe when I changed it so much apologies! Here goes: Used fresh cilantro, substituted black beans for skinned, seeded and diced tomatoes, used red onion instead of ones stated and for dressing whisked together balsamic vinegar, juice of one lime, splenda sweetener, salt, black pepper and of course the cayenne and cumin stated. Left for two hours and served with veggie bean chili and white rice: FANTASTIC!!!

Garlic Bread

Reviewed: Jul. 11, 2004
I love garlic bread but find most 'ready made' too greasy. This is a lovely easy to do way for me to 'have my garlic bread and eat it'. Nice combination of garlic and chives. I do have to halve the recipe however as my breadmaker does not handle 2lb loaves. I make it with wholemeal flour which is even better as I love the extra texture as well. I have to say though that adding extra garlic is a necessity for me. Lovely with bolognese.
