Tomato Basil Couscous Salad

Reviewed: Aug. 8, 2009
This salad is amazing! It was a hit with me and my friends. I didn't have any red wine vinegar or green onions at home though. So I used 3/4 white wine vinegar and 1/4 balsamic vinegar to make up the 1/3c. vinegar, and it tasted great. I also used green beans for a bit of green. I will definitely make this again, but would probably add even more fresh basil (and save some extra as garnish with the cherry tomatoes).

Ham and Cheese Bowties

Reviewed: Aug. 1, 2009
Great recipe to use up left over ham or grated cheese. I live in Europe, so had to substitute some ingredients: using dijon mustard, cheddar cheese, and smoked ham. I also added about two handfuls of peas (like a few other members suggested) and used whole wheat pasta. An easy and tasty weekday meal!

Blueberry Oat Muffins

Reviewed: Aug. 1, 2009
These muffins taste GREAT! They look great too. They aren't very sweet, but I only consider that a plus. They are fairly healthy and the oats give a nice flavour to them. I followed the recipe, except for substituting the blueberries for frozen raspberries (which worked very well too). I've made them two times already, and will definitely make it again. Thank you for the recipe!

Honey-Oat Pan Rolls

Reviewed: Aug. 1, 2009
These rolls were lovely! I followed the recipe as published, except for the pan instructions.. I work in cm. rather than in., and was obviously not thinking when I calculated the pan size and so accidentally used a pan twice as large as instructed. And the rolls came out VERY FLAT. But they were nice anyway and had a great flavour to them. Will make this many more times (but with the right pan)! Thank you!

Apple Oatmeal Cookies II

Reviewed: Aug. 1, 2009
I had a couple of spare apples, and liked this recipe. After reading some of the other reviews I added a bit of light brown sugar, and slightly more flour. I also used tablespoons rather than teaspoons to spoon out the mixture. The cookies came out very moist. The consistency was too cake like for my preference, but on the other hand my mum loved them. I agree that the oatmeal works very nicely with the apple.

Frosted Banana Bars

Reviewed: Feb. 5, 2009
Awesome recipe! Only changes I made was to add one more cup of bananas and bake it in a 9x13 pan. (I wanted more of a cake texture) I frosted it with Tom's whipped cream cream cheese frosting from this site and it was a HUGE hit! Thanks deltaj for a delicious recipe!

Whipped Cream Cream Cheese Frosting

Reviewed: Jan. 21, 2009
Awesome recipe and a big hit at a friend's birthday party! My only substitution was that I used confectioner's sugar. I had no problem with it being too runny. I whipped the cream and put it in the fridge while I mixed the cream cheese. I had enough frosting to cover two 9 x 13 cakes. Everyone raved about the taste, it was delicious and just right, not too heavy on the cream cheese flavor and not too sweet. Thanks!

One Bowl Chocolate Cake III

Reviewed: Jan. 15, 2009
Indeed, this is a delicious cake! I made it for my son's birthday for a German chocolate cake and it came out perfect. I increased the cocoa to an exact 1 cup measurement. Moist and fluffy, not dry at all. This recipe has already been saved as my standard chocolate cake recipe. Thanks a bunch!

Kalua Pig in a Slow Cooker

Reviewed: Dec. 16, 2008
I'm reviewing this again since I have made it almost 10 times now. You deserve 10 stars for this recipe. Thank you again and again and again! I never cook pork roast any other way except this way. Super terrific awesome VERY flavorful. I sometimes just sprinkle the salt on it so it doesn't get too salty. I use smoke flavored sea salt. (All I can find here in Sweden) Shred at the end and let the juices absorb into the meat. It has never failed to come out moist and juicy. I can't rave enough LOL!

Scalloped Potatoes and Onions

Reviewed: Oct. 3, 2008
You know when you're trying out a new recipe and there comes a point in the preparation when you know, you just KNOW that it's going to turn out delicious? Well that's how this dish was for me! When I poured the sauce over the potatoes and onions I knew it was going to taste good, and it did! My family ate it up. I didn't have ready made chicken broth so I used a tbsp of chicken boullion and 1 3/4 c. water. I also used 2 tbsp of plain yogurt instead of the mayo. I didn't have paprika either so I just sprinkled the top with Mrs. Dash table seasoning and it still tasted great. I was worried that it might have had too much onion, but I worried for nothing. The onions didn't overpower the potatoes. This recipe definitely goes in the recipe box! Thanks for an easy and tasty dish!

Apple Crisp III

Reviewed: Sep. 28, 2008
Thanks for a yummy recipe Carrie! My family loved this. The only changes I made was to cut the sugar down to 2/3 c. and add another tsp of cinnamon. I used fresh picked apples of varying sweetness. I added the water but wound up getting applesauce crisp so I think next time I will leave it out or just use a few teaspoons. I served it with vanilla sauce and boy was it delicious. Still gets 5 stars for ease of baking and taste!

Chunky Apple Bread

Reviewed: Sep. 28, 2008
Awesome recipe Joan! We went to an orchard this year and picked over 60 lbs of apples. I had 10 different varieties and wanted to make something that I could give out as gifts. This bread was terrific! For my personal taste, I made these changes: I used 3 apples of varying degrees of sweetness, 1 1/2 c. sugar, 2 tsp of cinnamon and 2 tsp of vanilla extract. I didn't have mayonnaise so I substituted plain yogurt. Not a fan of raisins in bread so I left them out. I have now made this recipe three times and each time I got rave reviews. Thanks for another "keeper" in my recipe box!

Red Velvet Cake IV

Reviewed: May 19, 2008
I had this cake when I lived in the States a few years back (I'm a native European) and I absoultely loved it. So I was excited to find a recipe that didn't call for cake mix. So I made this for me and my sisters birthday and it did taste ok. Very rich though. However it was quite messy to make and terrible to frost. It just crumbeld and there wasn't enough frosting to do the whole cake. I ended up useing whipped cream on the outside. I also had to leave the cake in the oven for about 20 min. more than the recipe called for. However, everyone liked the cake and it did taste fine.
