Catherine's Spicy Chicken Soup

Reviewed: Oct. 22, 2007
Oh, the flavor! Rich and velvety and with just the perfect level of spiciness. The only changes I made were to leave out the whole tomatoes and use a rotisserie chicken instead of boiling breast-halves in the stock. I won't be doing that again--the boiling of the breast-halves would actually be less work, I think. The rotisserie chicken, which was cooked perfectly and tender, ended up having a mealy texture and almost disintegrating into the soup. Regardless, it was delicious, so I will most definitely be making this soup again.

Old Fashioned Onion Rings

Reviewed: Oct. 22, 2007
Excellent recipe, and even a medium-sized onion makes a LOT. I par-fried these before giving them a final frying, as I usually do with fried foods, but won't be doing that again--the onions were cooked perfectly and the breading had a light, crisp texture after the first fry. The only change I would advise making is to add a LOT more spice to the batter. I added the teaspoon of salt and a total of another couple of tablespoons of spices (parsley and oregano, onion and garlic powder, cayenne, paprika, and black pepper), but I felt that the flavor of the rings was pretty bland. After frying the rings, I sprinkled another couple of tablespoons of the spices on the onion rings. My husband doesn't usually care much about food, but he loved these.

Sandy's Chocolate Cake

Reviewed: Oct. 22, 2007
Yum! This is a very simple recipe for a very tasty cake. The only potential issue is that this recipe makes a LOT of cake, so make sure you have enough pans available to bake it all!

Apple Crisp III

Reviewed: Sep. 16, 2007
I made this tonight and it was really delicious! It was easy too. I was looking for something to make with my apples that I had in the fridge and this popped up. I do agree with a few others though that 1/2 cup is just too much water but it also depends on the type of apples you use. I didn't use so much water and it still had lots of liquid. But it went GREAT with vanilla ice cream. And always serve warm, cold is ok but its better warm. ;-)

Seven Layer Taco Dip

Reviewed: Jun. 3, 2007
Wow this is delicious for breakfast, lunch and dinner! haha! Just kidding but I served this today as an appetizer for my guests at my daughters 1st bday party and everyone loved it there was hardly any left over! I added guacamole to it and I made that by adding just a packet of guacamole seasoning mix stuff and I added the taco seasoning to the cream cheese/sour cream mix in which i didn't add that much cream cheese or sour cream. I felt only half of each that was listed was enough! thanks for the great recipe :) I can't wait to eat the left overs! I forgot to add that this dish is GREAT served cold! After I put it together I put it in the fridge for about 15 minutes and then served it but I put the leftovers away for a few hours and then snacked on it later and it was even better colder. :)

I made these lastnight. they are good but they were a little too buttery for me. I think I'll add more flour next time. They are tasty though :)

Easy Decadent Truffles

Reviewed: Jun. 2, 2007
I made these a couple days ago for a party that I had today. No one really ate them but I like them. Warning, they are really rich and do make them as small as you can! I made exactly as the recipe says except I put in rum extract instead of vanilla. I can only eat one a day and I made about 30 of them, not too small either! OH well :) they are good anyways! I didn't use as much sugar though.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Jun. 2, 2007
I just made this tonight and WOW it is so tasty! I have it in the fridge for tomorrow though because it's my daughters 1st bday and I'm having a party. I didn't add the raspberries though from previous reviews and also because I just couldn't find any but I added raspberry preserves and it tastes great so far and that's without the apple added! I'm adding that tomorrow before I serve it. I also added nectarines.. :-) The cinnamon chips are the best though! I wasn't sure why everyone was raving about them and now I know why! They are fantastic! and super easy to make too! I might make just those in the future. I used a regular vegetable oil spray. I figured I just needed that so that the sugar and cinnamon would stick to the tortillas. I used a pizza cutter too and cut more than 1 tortilla at a time and used a muffin form to make a scoop and that is great! :-) Mmm!! thanks for the great recipe! I can't wait for my guests to try it! update: my guests really liked it. I didn't get asked for the recipe or anything but they asked what was in it. no one really touched the cinamon chips though which was sad! they are good. I think everyone thought I bought them at the store. haha! I'm happy with this recipe though :) It went great along with the Tres Leches cake recipe I found on this site.

Tres Leches (Milk Cake)

Reviewed: May 11, 2007
I made this cake tonight and it was really good! I was worried at first when It came out of the oven because it looked so flat and boring but when I added the milk it turned out pretty good! I didn't add all the milk though. I left some out so that I could pour over each slice as I served. I think a little drizzle of the extra milk around the slice is perfect and also gives it a nice presentation along with fresh strawberries and whip cream on top. :) I also add the whip cream individually (i cheated and bought one of those cans of whip cream). But it was too thin I think for me and I used a 9x13 inch glass pan too. I am going to double this recipe next time and use the same pan cuz I love thicker cake. :) I'm glad I found this recipe! thanks alot!
