Geysers, glaciers, lava fields, and steaming sea-green pools abound on this barren, mountainous island straddling the Arctic Circle between Greenland and Norway. Sitting atop the junction of the Eurasian and North American tectonic plates, Iceland is constantly moving as its many active volcanoes testify. Settled by Norwegian Vikings in 874, Iceland is noted for rich fishing grounds, hot spring-fed greenhouses, sheep, wool, and a remarkably affluent lifestyle. Given its Scandinavian pedigree and its farming and fishing heritage, Icelandic food is similar to Danish and Norwegian fare. Menus include cod, salmon, lumpfish, trout, and herring, plus boiled potatoes, lamb, mutton, and greenhouse-grown tomatoes and cucumbers. It’s also not unusual to find whale meat and walrus paw served at specialty restaurants in Reykjavik, Iceland’s sophisticated capital city. Skyr, a yogurt-like product brewed from fermented skimmed milk, is popular at breakfast or sweetened for dessert.

Pork Chops with Sweet Tomato Chutney

I used 1/4 cup of sugar, which was plenty. Put a splash guard over the pan while frying the spices, the mustard seeds tend to jump all over the place. The recipe does not specify what type of mustard seeds to use - I used brown mustard seeds. I left the chutney to simmer for an hour, and it came out very tasty.

Scottley's Basic Yellow Cake

This was a good basic recipe. I like to add pecans and mini m&ms. I used homemade creamcheese frosting but next time will probobly try chocolate. YUM!

Vinegar Cookies

I really liked the idea of eggless cookies but mine flattened out into thin, sticky, sugary blobs. I'm not sure what I did wrong as I followed the recipe exactly as-is.
