Iceland

Geysers, glaciers, lava fields, and steaming sea-green pools abound on this barren, mountainous island straddling the Arctic Circle between Greenland and Norway. Sitting atop the junction of the Eurasian and North American tectonic plates, Iceland is constantly moving as its many active volcanoes testify. Settled by Norwegian Vikings in 874, Iceland is noted for rich fishing grounds, hot spring-fed greenhouses, sheep, wool, and a remarkably affluent lifestyle. Given its Scandinavian pedigree and its farming and fishing heritage, Icelandic food is similar to Danish and Norwegian fare. Menus include cod, salmon, lumpfish, trout, and herring, plus boiled potatoes, lamb, mutton, and greenhouse-grown tomatoes and cucumbers. It’s also not unusual to find whale meat and walrus paw served at specialty restaurants in Reykjavik, Iceland’s sophisticated capital city. Skyr, a yogurt-like product brewed from fermented skimmed milk, is popular at breakfast or sweetened for dessert.

About me:
I was born in Iceland because my father was stationed there in the Navy soon after my parents were married. I had dual citizenship until I was 18 but like most people living in the great United States, I am proud to be an American. I am happily married to a patient man who willingly eats my culinary experiments and we have 4 fur kids (a.k.a. cats) that we adore.

Chuck's Favorite Mac and Cheese

Reviewed on Nov. 16, 2009 by rachel
After making this I had to go back and see if I followed the recipe correctly, which I did. It was good I guess, and very easy to make, but the cheese sauce didn't come together at all. It was like cottage cheese with melted bits of cheddar sprinkled throughout. I like macaroni and cheese to have a thick, smooth, creamy sauce, and this didn't come out that way at all. It didn't taste bad, it was just disappointing cause it wasn't what I think of when I think of mac and cheese.

Potato Curry

Reviewed on Jun. 15, 2009 by rachel
I loved this, even though the consistency was a little thin, I will add less water next time. I used red potatoes because i think waxy potatoes hold up with rice (basmati) and starchy ones turn too mushy. I also added one clove of garlic, half an onion and a small zucchini. This was my first time making curry but I was impressed, it came out better than what I have had at restaurants.

Cake Mix Cookies IV

Reviewed on Jan. 12, 2009 by rachel
I used a yellow cake mix and added white and dark chocolate chips. The cookies were good, very soft and really sweet. But the dough was really greasy and I found it almost impossible to work with. I put it in the fridge for 20 minutes and it was much easier to shape after that. I noticed after I made them that my cake mix had pudding in the mix so maybe that was what made my dough so unworkable.
