Stuffed Strawberries

I have used mini marshmallows to stuff mt berries and then put them on skewers that have been loaded with green grapes. Using the berry as a flower at the end makes a great boquet which I have used as edible table decor! Great recipe-Thanks

Chicken Spaghetti Casserole I

Reviewed: Jun. 7, 2008
The best help for this recipe is from Deb from Houston if you scroll down. I took some shortcuts as I just added a chicken Boullion cube to the spaghetti water and I heated the frozen cooked chicken I had on hand in the hot stock water after the pasta cooked. I made my own cream of mushroom soup since I live overseas. If you dont have soup or you cant get it here is the recipe: 1/2 c milk and 1/2 cup cream mixed in glass measure cup. Add one chicken boullion cube for cream of chicken soup. I add extra garlic red pepper if I am making a mexican dish. If I need cream of mushroom I add 1/2 cup chopped mushrooms and some black pepper and some granulated garlic. Then heat the milk mixture in microwave until hot. Add 1/4 c. water mixed with 2Tbsp. corn starch and heat until thickened. This is the perfect substitute for all those expensive cream soups and is VERY tasty!!

Sweet Grilled Peaches

Reviewed: Jun. 1, 2008
I think this recipe is ok but nothing special. I used fresh peaches instead of frozen. I thought it came out mushy and too sweet. While it wasn't bad in taste, I will have to keep looking for something else.

I added two tablespoons of milk instead of one. It was really good and easy to make. It might also be good if cream cheese was added as well!

Rocky Road Caramel Apples

Reviewed: May 20, 2008
This is a great recipe. One thing to remember: Apples may have a waxy coating on them that keeps the caramel from sticking very well. Rolling your apples in boiling water very quickly will melt that waxy residue and the caramel sticks to the apple! How bout that? :)

Peanut Butter Popcorn

Reviewed: Apr. 13, 2008
Hubby says it is the best carmel corn he ever had, gotta be true!!! :) I made it for a movie night tonight , but he got to it first! I added to the melted mixture the swirled chocolate/peanut butter chips and poured it over the corn, then sprinkled some chopped pecans and Heath chips over that before toasting 20 minutes in the oven. I stirred the batch probably three times to keep it all mixed well. THANKS for the recipe!

Lentil Soup

Reviewed: Apr. 6, 2008
Prior to starting I prepared 2 quarts vegetable broth to use instead of regular water. I liked this recipe, but would suggest using more liquid (either water or vegetable broth) to make it more soupy -- mine came out more as a stew than a soup. I added a little tomato sauce to make it more watery towards the end. Overall a good lentil soup recipe.

Carrot and Walnut Cake

Reviewed: Mar. 24, 2008
This is a European style cake. It's quite dry and not particularly sweet, but frosting helps with the extra sweetness. I will probably not make this one again because I like my cakes more moist, but it's a great recipe if you're looking for a European style cake.

Gourmet Mushroom Risotto

Reviewed: Mar. 19, 2008
Excellent recipe. This was my first time making risotto and it was much easier than I anticipated. I ate two servings yesterday and this morning I brought some to work and I am eating it already (its only 10 am!!) – this is how good it is. My husband loved it too. I made my own chicken broth with fresh vegetables and chicken. I used 1 full cup of wine, baby Bella and white mushrooms and it wasn’t too much. At the end I also added cut-up chicken from the broth and some green peas, which was very tasty. And of course I used freshly grated Parmesan cheese. Making my own broth allowed me to control the salt and the end result was scrumptious!! Will definitely make it again – maybe with some tomatoes or garlic and shrimp next time.

Egg Salad Sandwiches

Reviewed: Mar. 14, 2008
This was a very good salad. I used freshly chopped onion, regular yellow mustand and fresh dill instead and served it on a sandwich bun with butter lettuce and a slice of tomatoe. Very good. I though 1 cup of mayo would be too much but it was perfect.

Prosciutto Wrapped Asparagus

Reviewed: Mar. 14, 2008
I saw these at my friend's party and they were very tasty. She didn't bake them. She pre-cooked the asparagus for 1 or 2 minutes and wrapped the prosciutto over few stems of asparagus and some cream cheese. She tied it with a chive. Very nice presentation and a great tasting appetizer. I made it few times myself.

Stuffed Cabbage Rolls

Definitely use suggestions from previous reviews and you will love this dish. This is the basic recipe I follow every time I make stuffed cabbage rolls. I always double the sauce. They come out just like my grandma use to make them back in Poland.

World's Best Lasagna

Reviewed: Mar. 11, 2008
This lasagna is great and the sauce itself is awesome too. My husband told me that this sauce is better that the one I usually make and that one was from his mother’s recipe. This recipe makes a little more sauce that you need so I use the leftover for some pasta or ravioli few days later. I followed some suggestions from the previous reviews and from making this recipe few times here are some things I changed. *Used 1lb each of beef and Italian sausage *Used less salt (only about a teaspoon) *Used only 1 tablespoon of sugar in the sauce *Used wine instead of water *Used fresh chopped basil instead of dry (about ½ cup) *Used “ready to bake” lasagna noodles *Used fresh deli grade ricotta cheese not the processed stuff from the container *Used freshly grated Parmesan cheese This is a 5 start lasagna recipe that it better than the one you order in the restaurant!! I often add spinach (fresh spinach wilted with some butter) to the ricotta cheese and it tastes great. Remember to always use as much fresh ingredients as you can – you will taste the difference (fresh ricotta and Parmesan, add fresh parsley and basil etc) Enjoy! Also, make the sauce a day earlier to save time.

Sicilian Lemon Chicken with Raisin-Tomato Sauce

I was so skeptical before I started this recipe, that I'm still surprised that I made it! It was really good. I didn't make any significant changes except for switching chicken tenders for chicken breasts. I definetely recommend this recipe!

To Die For Blueberry Muffins

Reviewed: Mar. 1, 2008
I followed this recipe almost to a T (used brown sugar for topping), as well as all the instructions - especially those pointed out by Chef Joy - and my muffins came out a mess. I must add that I'm a decent baker and 99% of recipes I try from this site turn out great. The muffins did not grow at all; the berries sunk right to the bottom (although I tossed them in flour before adding to batter); the 'topping' sunk into the muffin, making them too sweet and greasy; and after 18 min at 400F, the muffins were scorched at the edges, but raw in the middle. Very disappointing. I will be trying Blueberry Cream Muffins next time.

Baked Corn

Reviewed: Feb. 28, 2008
I made this corn bake once and I think I will go back to my old recipe with cream cheese and no butter instead. Its much better and creamier. Instead of butter and sour cream I use 4oz cream cheese and 3/4 cup of milk. I also add one additional egg. I use this recipe for years at Thanksgiving and everyone always loves it.
