Thick Cut-Outs

I LOVE the sugar cookies this made, but more than that this is a very flexible recipe. I used this recipe as a base and filled with coconut/walnuts/cream cheese and powdered sugar to make mountain cookies. Then I rolled in small balls and indented the top to use this dough as a thumbprint cookie base and added some peach jam before baking! WOW! One recipe and I have three Christmas cookies for my party tomorrow night! THANKS!!!

Cucumber Raita

Loved it! I like my raita thick (I've had it both thick and thin in restaurants) and the Greek yogurt does the trick. Now I never have to go out for Indian food!

Candied Sweet Potatoes

I sliced the potatos and then covered them with the butter, marshmallow, and sugar. I used only 1 cup of everything. Still really yummy but much healthier!

Slow Cooker Cream of Potato Soup

I loved this. I left about half the soup unblended which gave it some nice potato chunks. I added some turkey kielbasa (sliced) to the soup and served it with crusty bread. Will definitely make again!

Absolutely Perfect Palak Paneer

This is a great recipe. I did not have ingredients to make paneer so I did use ricotta cheese. WARNING! You MUST use a full fatted Ricotta or it will not hole up to frying. I used full fatted ricotta and it was PERFECT! Did not brown as well but still made perfect cubes!Thanks for the idea. Paneer is till much better if you have time to make it or can buy it readily....YUMMY!

Layered Chicken and Black Bean Enchilada Casserole

I'm not crazy about this recipe. I used leftover turkey instead of chicken which may be part of the reason. I would definetely use chicken if I made it again. Overall, this recipe is ok- nothing too special and not that easy considering you need to shred the chicken.

Swiss Chard with Pinto Beans and Goat Cheese

So great! I used an extra can of beans and will add more chard next time. The flavor was delicious even though I substituted lemon for lime juice and gorgonzola for goat cheese. Can't wait to make for friends and family at our next get-together!

Delicious Ham and Potato Soup

This was really yummy! I added noodles to it which was really good! I also added carrot, more salt and pepper (it was a little bland) and subsituted 1 can of chicken broth for some of the water. My husband really liked it!

Chocolate Mint Mayonnaise Cake

Cannot believe I forgot to rate this. I have made this more than once and LOVE IT. I get nothing but rave reviews on it, people always tell me that it looks like it came from a bakery. I add chocolate mints to the frosting while I am baking to give it that extra mint kick and then sprinkle with jimmies (chocolate sprinkles for those not from mass!!) to make it look nice... what a cake!!!

New York Cheesecake III

everyone knows how heavy cheesecake is and how many people it should feed. i brought this covered in fresh strawberries and chocolate sauce to an initmate gathering of about 10. The entire thing was gone in about 2 hours. This was my first cheesecake and I will not hesitate to make it again, esp since i tis blueberry season! YUM!
