Herb Roasted Pork

I used half the sugar since most reviews said it was too sweet, and used brown sugar for the extra flavor. Definitely double the glaze. I also used red wine vinegar, although balsamic would be good as well, and sprinkled some cayenne over the meat before baking.

Instant Yeast Rolls

I don't understand why the dough wouldn't rise. It's basically a pizza dough (if you take it easy on the sugar) After trying to get the dough to rise in a warm spot for 30mins, I knew I would end up with flat biscuits. I rolled all the dough out at once, folded it in half 2x and baked them. They were the hit of the evening. Next time, I would put the butter tabs in between layers of dough since the butter melted right off and stunk up the kitchen.

Basic Chicken Stock

I used chicken carcasses from the Roast Sticky chicken recipe from this site. I tossed in all the veggies listed here and some leeks, as well as some peppercorns. I simmered it for about 1 1/2 - 2 hours. Great basic stock!

Groovy Green Smoothie

This is a really great smoothie! My daughter is not a morning person and needs something nutritious in the morning that she can take with her to school, so we've been on a smoothie kick. I've made this one two times. Once I used frozen spinach (it was all I had) and once I used fresh baby spinach. I preferred the fresh spinach, but my 4 year old, 3 year old and 15 year old loved both. I freeze grapes and bananas so that it's a nice thick smoothie. Very good! We're adding this one to our repertoire!

Basic Vegetable Stock

Fabulous vegetable stock. Fortunately, in Warsaw, we can buy pre packaged vegetables for stock, so I just threw in celery root, parsnips, and leeks in addition to the recipe. It turned out to be a very aromatic stock which was fabulous for the risotto I was making. Will definitely make again!

Pork Chops Stuffed with Smoked Gouda and Bacon

Risotto with Tomato, Corn and Basil

This was pretty good. I doubled the garlic and didn't put onion (personal preference). My advice would be: DO NOT PANIC at the amount of fluid that goes into this recipe. It should all absorb in the end. Other than that, good recipe-- I will probably make it again.

Raspberry Almond Coffeecake

I have now made this three times, once as a small cake and twice as muffins. This is a five star recipe for three reasons. 1. It is absolutely delicious. 2. It is easy to make. 3. It is simple to substitute. First time I baked as is, was wonderful so I tried it a second time with a mixture of alpine strawberries and raspberries with orange extract instead of vanilla - amazing. Then, I tried it again with blueberries and almond flavoring - heavenly. I will keep using this recipe in every way that I can think of and I can't imagine that I will stop enjoying it!

Polish Sausage Kraut Skillet

The taste was good. I simmered the carrots and potatoes for 30 minutes before they were soft and I sliced my kielbasa rather than leaving them whole and then simmered them for another 20-25 minutes. I used half fresh sauerkraut from the store and half bottled sauerkraut with mushrooms. I don't know that I would recommend it to someone who doesn't like sauerkraut though, as the flavor was still strong, but that could have been because of the fresh sauerkraut. If you live in a place without fresh sauerkraut, it might be more mild. Will make this again!

Zucchini Brownies

The first time I made these I was taking them to a friend's house who has a child with a dairy allergy, therefore I omitted the frosting (and the nuts, just because I don't like nuts in my brownies). They were great! One of the other guests said she could taste the zucchini once it was mentioned to her, but I couldn't and neither could anyone else. The kids devoured them. The batter was VERY VERY dry going in, but came out delicious and fudgy. I'm making them again today and will serve with the frosting this time. This time I added a little more zucchini (about 1/3 extra cup) and the batter wasn't as dry. Great recipe for vegans and those with dairy or egg allergies.

Apricot Leather

I was looking for fresh apricot recipes to use up all the fruit my tree produced. This one is the best I've found. My kids (except the one who doesn't eat things that don't come from a box) LOVED it - thought it was a fruit roll up. I lowered the sugar to 1/3 c. on the 2nd and 3rd batches because our apricots are really sweet by themselves so the first batch turned out a bit too sweet for me. My oven only goes to 170, but I just left it on and cracked open for the whole day. It took about 6.5 hours.

Apricot Nut Bread

I was looking for several fresh apricot recipes to use up my bumper crop from my tree. I made this using fresh apricots (used two cups sliced and heated the apricots in a saucepan on the stovetop to release the juices and make it so that I could actually puree the apricots). The flavor is interesting. It tastes very strongly of apricots by using fresh. It's not my favorite, so I'll keep looking for a way to use the fresh apricots.

Cherry Chicken

It was good but not great. I used only 1 tbsp of olive oil to cut the fact content and used chicken breasts instead of whole chicken. I also used fresh cherries from my tree, tossing them with sugar and letting them sit for a few hours as another reviewer suggested. We just weren't crazy about it. I probably won't make it again.

Lemony Shrimp over Brown Rice

This is good basic recipe. I used 2 cups of chicken broth rather than 1/2 c. wine, because we like it saucier. I added 2 more cloves of garlic, used only 1 tbsp of olive oil and added some bell peppers because I had some that needed to be used. I served it with crushed red pepper for the adults and everyone enjoyed it. It has a very lemony flavor. Very good.

This was really yummy! I made some changes based on the reviews: 2 tablespoons orange juice, 2 teaspoons orange extract, and the zest of one orange. Also, I used dark chocolate instead of semi-sweet- it gave it a more european flavor. Overall, a really good cake!

Restaurant Style Egg Drop Soup

I had to try the egg drop soup simply to see what would happen if I stirred it in a COUNTER-clockwise direction rather than a clockwise direction like some of the previous reviews advised. I'm still confused by that :), does it matter what continent you're on?? In any case, the result was still a decent soup! I didn't have any chicken broth so I made it with water and added a chicken bullion cube a the end. As for whether the eggs are stringy or not I was under the impression it depends on how fresh the eggs are rather than whether you add them before or after the corn starch but I could be wrong...

Baked Fried Eggplant

These are so cruchy and scrumptious! I decided to make mine into french fry size peices rather than slices, however by doing this you start running out of the sour cream and egg mixture pretty quickly since it is so thick. I solved for this by adding about 1/4 cup of milk to water it down just a little which also made it easier to coat, however I would recommend that if you want "fries" out of this you should plan for double the batter mixture. My "tweak" didn't change the flavor at all from the ones that were coated heavy to the lighter ones, but the ones without the milk were heavier with the breadcrumbs and hence came out more hearty so it really depends on your preference. Overall this tasted great though. One other thing I will keep in mind is to add some some salt or other spices to the flour next time to make them even more tasty. A
