Chocolate Chip Coffee Cake

Reviewed: Jan. 14, 2007
This recipe is good but not great. It seemed as if the recipe didn't make enough dough/filling when you split in half. I had to make more topping for the top part. My husband liked it a lot but I thought it was kind-of bland.

4 1/2- This was really good! We had no basil but I bet with basil it would have been a 5 star. I think it would also go really well on a salad. Yum.

Pork Tenderloin in Bourbon

Very good! I didn't marinate as long as recommended (but I bet it would have been even better!). For a little extra, bake with pinapple rings on top. It looks great and the flavor is very subtle.

4 and 1/2- good but I wish it was a little prettier. I added a little more rum than specified. The guests liked it!

Banana Raisin Cake

Reviewed: Dec. 24, 2006
My family loved it. I was a little disappointed. It was pretty dry on the outside and took forever to cook on the inside. It tasted more like a bread than a cake. I did pour a little rum sauce on top, which added a nice kick.

Stuffed Pork Chops II

Reviewed: Dec. 24, 2006
This is much better than the rating appears. Just be sure to add spices to the bread crumbs: I like rosemary, celery salt, thyme, and a little bit of whatever else I might have on hand. Also, put some of the filling on top of the pork chops. It adds a delicious crust!

Chicken Thigh Fricassee with Mushrooms and Rosemary

Reviewed: Dec. 4, 2006
I changed this recipe a bit so hopefully no one will accuse me that I made it a completely different recipe, but I felt that it may make it better. I dipped the thigs in flower then egg then breadcrumbs as many other recipes call for and then followed as specified. I cooked this in wine/ vermouth mixture. Tend to use vermouth more than traditional white wine b/c it has a crispier flavor. The breadcrumbs made it absorb the liquid quickly so unfortunately I kept having to add more wine and was required flip chicken over a lot so it would not stick. However, after doing so I thought it came out great and BF liked it as well so I was happy. The wine taste was really nice not over bearing. I used pitted olives and overall I didn't have any complaints, the flavors of the olives, mushrooms, wine, and tomatos really did make this worth while and would definitely try this combination of flavors again. Slow Cooker Stuffing

Good flavor. It came out a bit soggy, so I'd recommend to make sure you don't put in too much broth. I added bread crumbs to make it less most towards the end and it came out good.

Rosemary Roasted Turkey

Reviewed: Nov. 24, 2006
Excellent. I had it in the oven for longer than 4 hours. I left the temperature for 3 hours as recommended then alternated between 200-250 F for a few hours extra as I had put it in the oven a bit early in the day. Meat was moist and very flavorful. Also I used fresh rosemary but dried basil and it still came out great. Whole family loved it. A+

I put in too much garlic so it came out bitter, but overall it was good and I'm sure it had potential to be better if it were not for the extra garlic.

Beet Salad with Goat Cheese

Very tasty. For the dressing instead of OJ concentrate I used a sprits of regular OJ and it tasted just fine. Combination of the goat cheese, beets, and nuts really pops your taste buds. Loved it.

Shredded Brussels Sprouts

Reviewed: Oct. 2, 2006
This was not a hit at our house. My husband complained that it still tasted too much like brussel sprouts. I like brussel sprouts but found it too greasy to feel healthy. The butter and bacon alone cancel out the nutritional value. Do yourself a favor- don't do the work and make broccoli or cauliflower instead.

Rainbow Trout with Yogurt Sauce

Reviewed: Sep. 9, 2006
Was a bit nervous that this would be a bit bland when I tasted the sauce on its own, but the flavors with the fish go very well together. I used quite a lot of lemon pepper, not drenched but a little more than it called for - probably about 1/8 cup for 2 medium sized trout. I also added salt and pepper to the lemon pepper seasoning. Baked at 350 for about 12 minutes then did the broil for 5.
