Lemony Green Beans with Walnuts and Thyme

This has become my new favorite way of eating green beans! I would add less lemon though- Somewhere between a whole and a half would be optimal! This went really well with either scallops or fish.

Dinah's Baked Scallops

This recipe was really good! I crushed up the crackers and put them in a zip lock bag. I included some crushed red pepper, along with some salt, pepper, and basil, into the mix. I used the bag to shake up the scallops in. I also halfed the butter but kept the wine and lemon the same amount. Once the 15 minutes was up, I broiled the top for about 5 minutes. Yum!

Pineapple Upside-Down Cake II

I have lost my pineapple upside down cake recipe and have been looking for one to replace it. While this one was ok, I think I will continue searching. I added pineapple juice to the batter to make it sweeter. It came out kind of doughy. Overall, ok but I think there's better out there.

Old Fashioned Peach Cobbler

This recipes was really easy and really good. The only thing I changed was adding a teaspoon of vanilla. I served it for my husband's grandma who said it was great!

Black Forest Cake II

NOT WORTH THE EFFORT. The inside frosting (even with the reduced 1/ 1/2 cup proportion) is way too sweet! The outside frosting is so bland and does not come out like the picture. People who say this recipe is a 4 or 5 are talking about a completely different cake, with so many modifications it might as well be a different cake. A waste of time, ingredients, and patience.

Chicken Breasts with Balsamic Vinegar and Garlic

OMG! This recipe is so yummy. I stuck with the recipe pretty much. The only change I made was adding spices into the flour- oregano, basil, and garlic salt. I used real balsamic vinegar and served it with spiral noodles. Next time I will double to sauce!

White Chocolate Macadamia Nut Cookies III

These cookies were complemented OUTSIDE of my presence on two occasions. I wouldn't change anything about the recipes. However, unless you keep the cookies small, I would estimate about 3 dozen cookies rather than 4.

Macadamia-Crusted Sea Bass with Mango Cream Sauce

This recipe is both yummy and pretty! I followed the advice of a member and pureed the mango sauce. However, I left it just slightly chunky which added nice bursts of sweetness. I also added about a Tablespoon of dark rum into the sauce. Finally, instead of sea bass I used Mahi-Mahi and served it with a side of black beans and basmati rice. I got much praise from this recipe. I will defintely make it again!

Coffeebar Chai

Pretty good! This went well with my afternoon of law books! I accidently put in a little TOO much cardamom- be careful! I also put in more vanilla but that was yummy and sprinkled some extra cinnamon. I used skim milk instread of regular milk and didn't taste too much of a difference.

Ziti with Italian Sausage

I was disappointed with this recipe. I had to add a lot of sauce which, though it made the dinner better, makes the five star decieving. I like Italian sausage but I thought this recipe was pretty heavy. The basil and mushrooms were nice touches. Overall, it was ok but it definetely wasn't anything revolutionary.

African Chicken Stew

This is a split decision between my husband and I. I would actually rate it about 3 but he seemed to like it and wanted to give it a 4. I opted for sweet potatoes which I think made it much better. However, I believe that this is way too thick and peanut buttery. It is pretty mushy as well. I served with plain yogurt to offset the peanut taste. I may make this again but I will defintely have to tweak the recipe.

Bacon Wrapped Barbeque Shrimp

I used large fresh shrimp. Wrapped each one in one peice of bacon as it called, but for some of the very large ones I used a strip and a half to cover the whole shrimp. In addition to the barbeque seasoning, I sprinkled each with cayenne pepper to give them a kick of spicyness and also dotted each side with a bit of BBQ sauce. Very quick and easy to make yet very flavorful. Glad I found this because it makes an awesome appetizer.

I served this over egg noodles (I had no time to deal with spatzel though it would have been really good!). I also mixed regular mushrooms with shitake mushrooms. Yummy. My only complaint was that the sauce was a little on the runny side. However, still very good!

German Chocolate Cake III

This really is better than bakery quality cake. I followed the recipe almost exactly, paying attention to the comments. I had planned on doubling the filling but it was way too much! This cake is rich enough as is! I did double the chocolate drizzle on the sides though. Perfect presentation. Also, definetely use cake flour- it gives it a light, airy feel. I will definetely keep this recipe!

Ginger Glazed Mahi Mahi

This is really good! I marinated it a little bit longer (35 minutes) and added lime juice to the marinate (about a teaspoon). Yummy! I served it with orange cilantro rice (the recipe is on allrecipes). It was perfect.

Orange Cilantro Rice
