Grandpop's Special Chocolate Cake

I loved it! It is simple and quick, and at the same time I've used this recipe to experiment and I came up with great ideas! Instead of using 2 eggs, I tried 4 egg whites, I also substituted the cocoa with chopped nuts... It is an awesome recipe for someone who's learning to bake! It was actually the first cake I ever made by my self!

Rich and Creamy Roasted Eggplant Soup

This is an easy and delicious soup. To make it a bit lighter I have replaced the cream with half fat milk. Also on seeing as in one occasion I didnt have thyme, I used sage instead. The result was unbelievable!

Cameroonian Fried Spinach

Looking for a different way to use my shiitake mushrooms, I decided to try this recipe. It was so good, my bf loved it. I also tried adding squares of aubergine and it was soooo delicious!

Tasty Tender Pork Tenderloin

I was tired of fixing my pork tenderloin the same old way I always do, so I came here to see what I could find...I found this recipe--very different from anything I've ever done--and it was terrific AND easy!! I saved some of the sauce and used it the next day on chicken--that was great, too! Thanks for the recipe!!

Oven-Baked Caramel French Toast

Zippy Egg Casserole

I had made this before (and rated it 5 stars). I just recently wanted to make this casserole for a baby shower, but I now live outside the U.S. and am unable to get croutons, pepper jack, swiss or cheddar cheese OR half and half. But, I want to let you all know how flexible this recipe is!! I made my own croutons (using a recipe also from this site), all whole milk, chorizo instead of sausage (for that kick), and American cheese and a hard cheese similar to Swiss (those are all I could get here...). Anyway, it still turned out great! Next time, I'd use a bit less milk, but otherwise, I was pleased!

Migas II

I grew up eating this dish as well. I don't know if it was because my Mexican father taught my mother to make it (and she revised it), but we always added diced tomatoes and green chile salsa. This has always been a favorite of mine, and traditionally, it is a way of using old, partly dried corn tortillas.
