Deb's Tapenade

I have a recipe for tapenade which I've been using for years but decided to try this one. It is not bad but it's got way too much vinegar. Among other things, my recipe calls for just the olive oil and some anchovy filets to give it a certain "umph" lacking in this recipe.

Pineapple Chicken Delight

We loved this recipe at home... I made a few changes to it. Instead of using green peppers I made it with red peppers, added some carrots, potatoes, and pineapple chunks- I stuffed a whole chicken with the veggies and slow cooked it in the oven for a few hours... it was awesome! Thanks.

Tofu and Veggies in Peanut Sauce

Beef and Barley Casserole

This is a recipe with potential. For my batch I used chunks of beef rather than ground beef; I added a celery stalk cut in small pieces; some rosemary, marjoram and thyme; about 1/4 cup of cooking wine and a bay leave. It turned out to be a very fragrant dish and quite tasty!

Basic Flaky Pie Crust

I don't really have anything to compare it to, but it turned out perfectly, so I'm giving it a 5!! I don't have shortening available in the country I live in, so --thanks for the tips to those who gave them--I used butter. I also used wax paper to roll the dough as someone suggested--that made it SO EASY!!! Thanks everyone, I'd been stressing about my pie crusts and because of this recipe, I didn't need to!!

Grandmother's Buttermilk Cornbread

Really great when you want an old fashioned, sweet cornbread! The first time I made it, I only put 1/2c. sugar in, thinking 2/3 was way too much, but my husband said "I like really sweet cornbread!", so the 2nd time, I put it all in, and it turned out perfectly! Thanks for a great cornbread! We use it for chilis, soups and even breakfast!

I agree this is a bit heavy on the tomato. I will cut back or cut out the tomato paste next time. I halved the recipe and it still makes a huge amount. We liked it ok. Nothing great but easy to make and filling.

Apple Crisp IV

Made this for a party and they loved it. We had it cold the next day and it was even better after sitting for awhile. For those like me who dont know what 2 quarts of apples is... I used 8 med Granny Smith and it was perfect. Followed other recommendations to use less flour and more cinammon. I let the sliced apples sit in a little lemon juice to creat a sauce and poured this over the apples before adding topping and it was not dry at all. I use only about 1/4 of the topping to put a thin layer in the bottom of the 9X13 pan and the rest on top and it turned out great!! Ive used store bought topping mix in the past but no more. This will be a "go to" recipe in my box. Thanks

Yum-Yum Corn

I have been meaning to rate this recipe for a while. I made this last Thanksgiving and my entire family loved it! Even my young cousins who are picky eaters! I will be making this again this year. I did add an extra garlic clove because I felt like the recipe didn't call for enough. It was excelent!

Chocolate Banana Bread

I followed this recipe exactly as listed except I follwed another reviewer's advice and mixed the dough by hand (mixed dry ingredients and created hole in the middle and then added the mixed wet ingredients (mixed sugar with wet)and sour cream in the center and mixed by hand). This made the bread SUPER MOIST. Next time I might leave the chocolate chips out since I thought the bread would be better without them and add a little extra cocoa powder. Worth the effort!

Roasted-Vegetable Stock

Very tasty stock! I don't like wasting food so after I strain the stock, I put all veggies on the blender with some liquid (stock) and a little bit of milk or cream. My kids love this creamy veggie soup ( a great source of fiber)

English Muffins

I have made these muffins over 100 times and they are just perfect for me and my family. I now make them using 3 cups of Whole Wheat flour and 3 cups of regular flour and I tell you they are just as delicious. They were a bit denser but they tasted just as fantastic as the others. I find it is a great way to include more whole grains into my kids meals.

Caper Baked Chicken

Carrot Cake III

This carrot cake is absolutely delicious. I made it for a luncheon party and there was nothing left over. The only change I made was in the icing. I used half the butter and less than half of the sugar than called for and it still turned out terrific!

Chicken Scampi I

I hate to say this but I did not care for this recipe. I made it exactly as indicated except for the marinating time which I shortened. Since I couldn't subtract anything, I started adding all kinds of things to make it halfway decent. Sorry, will definitely not try it again.

Honey Baked Chicken II

Wow! This recipe was a total hit at hoe, I just added an extra teaspoon of curry, two garic coves, and I only used 1/4 cup of margerine instead of butter because I keep kosher. Excellent!

Fajita Marinade I

This is an excellent marinade. We loved that it has a little zing to it with the cayenne pepper. We didnt have the liquid smoke but it was still great. I brushed it on some large portobella caps and let sit for 10 minutes before grilling and it make fantastic vegetarian fajitas.

Eggplant Parmesan II

Very very good. It took me longer on the prep part as I had to use several cookies sheets to bake the slices. I followed all other tips to "sweat" the slices, bake 5 minutes on each side at 450 and add a little extra parmesan. For a meatless meal this was fantastic, even my finicky father liked it. Will definately make this again.

Grandpop's Special Chocolate Cake

I loved it! It is simple and quick, and at the same time I've used this recipe to experiment and I came up with great ideas! Instead of using 2 eggs, I tried 4 egg whites, I also substituted the cocoa with chopped nuts... It is an awesome recipe for someone who's learning to bake! It was actually the first cake I ever made by my self!
