Smooth and Creamy Peanut Butter Pie

Chocolate and peanut butter! Yummy. I made no changes with this one. My oldest daughter gets the credit for helping and decorating. I just made suggestions. She used Butterfingers and Heath bars for the decorations. As for the rating, it was not my alone either. They rated it too.

Japanese Chicken Wings

Wow! There are are some recipes that will be just above the rest and are "remarkable". That is how I feel about this one. It is that good IMO. I found it supper easy to make. I did add a bit or salt and freshly ground black pepper to the flour. I also doubled the sauce so that I could baste it during the baking. I had to use 2 eggs because one wasn't enough for the amount of wings I had. This one is a keeper! Thx!

Broiled Tilapia Parmesan

Guy Approved Meatloaf

I finally found a Meatloaf that my kids will eat. My husband who doesn't care for Meatloaf either said that it was very good. I did bake the bacon in a separate foil lined cookie sheet for about 15 minutes and then removed it from the oven and put on paper towel lined dish to drain some of the excess fat. Towards the last 15 minutes of baking I poured some barbecue sauce over it and layered the bacon on top. It was just a little greasy but most had already drained.

Easy Platz (Coffee Cake)

I love this recipe because all ingredients were on hand at home, and I didn't have to go to the store for anything. I took the advise of others and used a 9X13 dish so it was no thicker than 1/2 an inch thick, but it still needed to cook almost an hour. Be prepared for that. (I had a very anxious birthday girl waiting for her breakfast cake!!) :) Also, the blackberries we had weren't very good... not too sweet, so if that happens again, I think I'll just sprinkle some sugar on them before putting them on the cake - that should help. But the cake was a hit - we'll make it again for sure. Thanks for sharing it!

Salsa Chicken

I've found a great new way to cook chicken that not only is delicious but also fast and easy. Before I left for work on Tuesday I put the chicken brests in a Ziploc bag with the juice from a can of Rotel and the taco seasoning. Put this in the fridge and left it to marinate. Got home and just completed the dish. I mixed the rotel contents that were left in the can with the salsa. It had a lot of flavor and my biggest surprise was how much my kids who are picky eaters enjoyed it and complemented me. Thank you Faye.

Southern as You Can Get Collard Greens

So good. Very comforting. I omitted the water and the vinegar. I sauteed half an onion, 3 cloves of minced garlic in about 2 tbs. of extra virgin Olive Oil, added 3 strips of bacon, salt, pepper and red pepper flakes. Cooked on low for about 2 hours. Great flavor.

Sausage and Egg Casserole

When I made this it was very watery - probably because I used light bread (it's really airy, not as dense)... so it didn't absorb the milk. Next time I'll just use less milk with the light bread and it'll be better I'm sure. Even with it a little too liquidy, we all really liked it around here. I made it for Christmas morning. It's a good recipe for holiday mornings since you make it the night before!

Golden Crescent Rolls

These were a delight. I was so busy when I made it that I just let them rise for longer than stated but it was just fine. Excellent. I'm not sure that it makes it better or not to sit rising/resting longer but they turned out light and yummy. Not so much like a crescent (that is more the shape) but a great roll. The butter in the middle adds a lot to it. Thank you Mike.

Libby's® Pumpkin Cranberry Bread

Excellent. Tasty and moist. I used 1/2 cup of oil and 1/2 cup applesauce to sub for the 1 cup of oil. I also added just a dash of freshly grated nutmeg. I put them into mini loaves and gave them as gifts to friends.

Orange Pumpkin Loaf

Great tasting Orange loaf. I would have to say that the Pumpkin taste gets a little lost in this but it is still so full of flavor and delicious that it definitely deserves 5 stars hands down. I didn't use raisins because of my kids but in my opinion that would have been great too. I would recommend baking it longer because towards the bottom it was still a little uncooked. A keeper and great any time of the year though.

Sweet Potato Souffle I

This was one of the best if not the best Sweet Potato dish I've ever made/tasted. One of my guests kept going uhmmm, uhmmm, yummm the whole time. I added about 1/4 tsp. pumpkin pie spice (made my own from this site) and I cut the sugar down to 1/2 cup, but those were the only changes I made. I wasn't sure how much 3 cups would amount to in and used 5 yams. It was perfect. Thank you Ricki.

Cranberry Sauce

I'm glad I came across this recipe. I needed to find something that would be fast and great tasting. I only had half a bag of cranberries left and so I scaled the recipe down. I added some orange zest, 1 tbs. orange Marmelade and about 6 whole cloves. The result was delicious. Thanks Toni.
