Steamed Corned Beef

Submitted by: Kristal
Steamed corned beef is a classic Bahamian dish also known as 'Fire Engine'. Traditionally served with grits for breakfast or with white rice for lunch or dinner. Steam is a Bahamian term for anything fried down and simmered in a tomato base (bologna, pork chops or chicken can also be served this way).

Cabbage Cut-Up is similar to a cole slaw. It's easy to make and not full of mayonnaise, so it's great for someone on a diet or looking to eat healthier. You can use more or less lime depending on your personal preferences.

This recipe is great for grouper fillets, but you can also use it with tilapia. It's both healthy and flavorful! You don't have to love fish to love this dish. Serve it with rice and cole slaw to complete the meal.

Brazilian White Rice

Submitted by: Nandabear

White rice is the main side dish made in Brazil. This is the way my mom would make it and taught my sister and I. What makes this so different is that we fry it in oil with minced onion and garlic before adding water. You can also use part water, part chicken broth. The secret is to not let it overcook because it should come out loose and not sticky.

This milk caramel can be eaten anytime during the day and in many different ways: with bread, cheese, cookies, and my favorite, with meringue. Some of my foreign friends love it, some others hate it, so I guess you must give it a try and judge then.
