Baked Zucchini Chips

Reviewed: Nov. 13, 2009
The breadcrumb mix can use some more seasoning... like garlic powder and onion powder...maybe more parmesan. These are good though. I like that they are baked and not fried but still taste nice and crunchy. I served them with a garlicky mayoketchup dip that is very popular in PR (basically equal parts of mayo and ketchup with a pressed garlic clove or garlic powder mixed in).

Tomato Chicken Parmesan

Reviewed: Nov. 12, 2009
Stupid me thought that I had parmesan in the fridge and guess what... I had used it all. SO...lazy me didn't go to the store and just skipped the parmesan. Yep, chicken parmesan WITHOUT the parmesan. A sin. Forgive me. Instead of Monterey I used shredded mozarella. I pounded the chicken thin and added twice as much sauce because we LOVE sauce. Served it with spagetti ... Yum Yum. It turned out pretty awesome. Of course, with parmesan (like it is supposed to be) would be even better. Quick, easy and flavorful = I'm happy.

Easy Tuna Casserole

Reviewed: Nov. 12, 2009
5 stars for simplicity and I liked the idea of using french fried onions since I was out of bread crumbs. Alterations: I had no cheese but I did have two boxes of mac-n-cheese. Added some chives, celery, pepper, and parsley. That was it. Thank you, because my boys who are 6 and 4 years in age give me daily grief when it comes to meals, they hate this!! ;)

Spooky Halloween Eyeballs

Reviewed: Nov. 12, 2009
First off, I love this idea. Very creative. I did not make eyeballs though - I made mini pb cups. The only reason I tried this recipe is because I saw some reviews say they taste exactly like the store bought PB cups and boy, they were right! I almost couldn't believe it. Since I ran out of chocolate along the way I just stuck the rest in a lined pan and stuck it in the freezer to cut into squares later on. Delicious, but the mixture sure does soften quickly after it exits a cold environment. Either way, I enjoyed these. Made the cups to make some cookies and they turned out fabulous. Thanks for sharing.

Batata Nu Shak (Potato Curry)

Reviewed: Nov. 12, 2009
Thanks for sharing, Susmita, we were very impressed. This dish reminds me of the delicious potato dish or curry I`ve tried in my local Indian restaurant. But this was even better. I didn`t have fennel seeds and asafoetida, so I omit them. Very delicious.

Peach Margarita

Reviewed: Nov. 12, 2009
Maybe it were my peaches, but I seemed this cocktail was bland. I used lime juice and orange liqueur instead of lime margarita mix and all I felt in this cocktail were lime juice, tequila and something else, but this something wasn`t peach flavor. I`ve tried other fruit margaritas (strawberry, banana, mango) and these were better in comparison with this one.

Russian Chicken with Feta Cheese

Reviewed: Nov. 11, 2009
We really enjoyed this dish! As suggested I doubled the sauce. Next time I will put the sauce in the food processor before baking, so this way you don't have pieces of onion/garlic/feta, just a preference I think would be better a smooth sauce. Served over whole wheat spaghetti and steamed veggies.
