Central and South America

Lying just below Mexico and spanning south across the equator for nearly 5,000 miles down to the tip of Antarctica, Central and South America make up the fourth largest land mass on the planet. Lush rainforests, high desert plateaus, fertile grasslands, rolling plains, and a list of superlatives that includes the world’s highest waterfall, largest river, and longest mountain range (the Andes) make this continent and its connecting Isthmus of Panama a geological superstar. This area is where many of our favorite foods originated, first cultivated in the pre-Columbian era by Peru’s sophisticated Quechua, or Inca civilization, and Mexico’s Mayan Indians. The list is long and colorful, including bananas, chocolate, corn, potatoes, sweet peppers, chile peppers, quinoa, cassava, vanilla, and tomatoes.

Thanks DEANE for this recipe. I used extra garlic and sea salt because of personal preferences but other than that no changes were necessary. Very , very tasteful and I personally like it the texture. Thanks for sharing and I will make it again, for sure. :0)

Cream of Tomato Gorgonzola Soup

Reviewed on Nov. 7, 2009 by newheart x Mr.Max
Thanks Michelle Hackard for this recipe. I loved it!!! Very filling and health, tastes great too. I had some ripe tomatoes so I cooked them with olive oil, salt, pepper, garlic powder ,onion powder, oregano and a bit of sugar, took the skin off, made a puree and use up as requested in the recipe in place of the canned soup (particulary I do not liked canned tomato soup) ... other than that ... NO changes were necessary. Thanks for sharing and I will make it again. :0)

Hot Date with a Chicken

Reviewed on Nov. 8, 2009 by newheart x Mr.Max
Thanks JackiMillazo for this recipe. I'm rating your recipe only for the flavor...as I did not assembled the way the recipe calls for... AMAZING MIX OF FLAVORS, Sweet, Spicy, Tangy and YUMMYYY !!! I loved it. I followed the recipe as it is except for the assembling( like I said before ) and I'm amazed !!! I served in a bed of white rice with a very, very simple tossed green salad. Thanks for sharing and I will make it again... :0)))
