Panama

Panama is the nexus linking North America with South America, and the Atlantic Ocean with the Pacific. With long stretches of beach along two oceans, seafood is found in abundance. Lobster, octopus, and corvina (sea bass) are often found on the menu whether grilled, fried, or marinated in citrus juice in ceviche. Other typical dishes include tamales of beef and corn dough wrapped in banana leaves and “ropa vieja”, a stew of shredded flank steak, tomatoes, peppers, and cilantro. Sancocho, a hearty stew of meat, potatoes, yucca, plantains, and cilantro is the national dish of Panama. In 2003, a 2,500 gallon Sancocho was made in honor of the country’s centennial celebration. It was entered in the Guinness Book of World Records as the largest soup ever made.

Split Pea Soup

This was my first time making split pea. I used the ham bone from our Easter dinner. This was outstanding and very easy to do. As suggested, I used two quarts of chicken broth rather than water overnight. I doubled the carrots and potatoes simply to add more so I can freeze. I added more pepper as well. True test came when my 7 year old son said it was awesome. As with most children, he said it looked disgusting, but our rule is to always try something and he LOVED it. Thanks for the recipe!!!!!!

Mango Muffins

It was very good for the people that enjoy mango flavor, it is a strong flavour by itself but the combination with ripe bananas was excellent because the get along very well and lowered the mango flavor. I don´t know if I packed them very promptly in a container and they have to cool for a while but some of them got sticky with the paper cups and could´t get them out completely.

Addictive Pumpkin Muffins

A great potential recipe, I agree that should increase species a little bit and that´s it! I use splenda brown sugar for baking and gave it an amazing brown color. No other changes in the recipe that is simple and healthy by itself.
