Central America

Central America is a narrow stretch, an isthmus, between the Pacific Ocean and Caribbean Sea that tethers South America with Mexico. This tiny mountainous region is only a quarter the size of Mexico. At one time, it was ruled over by the ancient corn-based Mesoamerican civilizations that grew the tomatoes, chiles, corn, and beans still so well represented in Central American cuisines. Early Spanish conquerors introduced pigs and cattle, revealed today in beef stews (pipian, picadillo, and hilachas), stuffed pupusas, egg and chopped beef hash (carne deshilachada), chopped pork and cabbage (vigaron), marinated grilled beef (caballo bayo), and pork and white beans (frijol blanco). Chicken takes well to warm chocolaty mole sauces. Seafood is important here, too, and there is no end to the variety. Central America also produces an abundance of coffee and fresh fruits, from bananas to figs, mangoes to citrus.

Peach Margarita

Maybe it was my peaches, but I seemed this cocktail is bland. I used lime juice and orange liqueur instead of lime margarita mix and all I felt in this cocktail were lime juice, tequila and something else, but this something wasn`t peach flavor. I`ve tried other fruit margaritas (strawberry, banana, mango) and these were better in comparison with this one.

Chicken Cordon Bleu II

Excellent. I made it as described except for doubling the sauce (it all still disappeared). I also like smaller pieces of chicken so I split the breasts in half lenghtwise before flattening and rolling them up. After browing them, they spent only 20 mins cooking that way.

True Blue Custard Crunch Pie

This pie is fantastic! I baked it and a half of this pie disappeared just in 20 min after baking. I used a little brown sugar in the custard and added brown sugar and cinnamon to the topping. Cheap ingredients and very easy to make.
