These cakes were so awesome...I've already made them twice! It's a nice simple way to eat fish. And it takes some of the fishiness that people don't like out of them.

Big Soft Ginger Cookies

Reviewed: Oct. 15, 2008
This cookie was really tasty and full of flavor! I've never really liked ginger cookies but this recipe really made me change my mind :D I skipped the cloves and added extra cinnamon and a little nutmeg. Then I followed other users' advice on adding orange juice instead of water. I didn't have grounded ginger so I used grated fresh ginger and it worked very well. I also didn't have molasses but I substituted it with 1/4 cup mix of honey and brown sugar. I also put the dough in the freezer so it wouldn't be so sticky and hard to work with. I found the cookie a little difficult to take off the cookie sheet so I baked them on wax paper at 375 for 10 minutes. Despite all the substitutions, the cookie is a delight in every bite!

Beef Stew VI

Reviewed: Jul. 14, 2008
This was flavorful and delicious! I made the additions that Chuck suggested. Flouring and seasoning the beef first and later adding the ketchup and Worcestershire sauce with the liquids. The only other change I made is a couple of bay leaves. My favorite bite is the very last with all the broth, pieces of veggies and flavorful goodness!

Sweet, Sticky and Spicy Chicken

Reviewed: Jul. 13, 2008
Very easy, tasty and quick. I only used two breast halves and omitted the hot sauce and salt and pepper. I also used a sodium reduced soy sauce and it came out perfect, no overpowering soy sauce flavor. I had sauce left over so I served the sauce over some noodles with the chicken on the side. It was a quick and delicious plate. My family loved it :D

Crepes

Reviewed: Jul. 13, 2008
These were SOO easy to make and they turn out so perfect! They are very light and thin and you can put whatever you like in them! I put the batter in the freezer for about 15 minutes and it turned out fine. Crepes are always loaded with too much sugar and cream. I'm never buying them again! I filled one with banana halves and a cream cheese sauce (2 tsps cream cheese, 1/3 cup milk, 2 tsps sugar and 1 tsp vanilla heating over medium heat and stirring until it thickens) and dusted it off with powdered sugar. I filled another one with banana halves, grated semi sweet chocolate and cashew nuts bits (pounded in a bag). They were SOOO good! Thanks for this wonderful recipe Erin!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jul. 10, 2008
These cookies were amazing!! They disappeared the same day they were made! And my family usually takes days to finish baked goods! They were absolutely wonderful and I will never have to buy cookies from bakery shops again! I used 3/4 cup brown sugar and little less than 1/2 cup white sugar and the cookies still turned out perfect: not too sweet but still every bit chewy and wonderful. I also only used 1 cup semi sweet chocolate chips and that was more than enough! The dough was chilled in the freezer for about 15 minutes and was easy to handle. Thanks for the best chocolate chip cookie recipe!
