Pumpkin Bread IV

Reviewed: Sep. 3, 2009
Very good! I had to make some changes based on what I had & after reading other reviews. I used sugar-free applesauce in place of oil, used half splenda & half brown sugar splenda, used 1 540ml can of pumpkin pie filling (oops!) and made muffins & i loaf. They turned out super moist & after we topped them with a cream cheese icing, they only lasted 15 mins with my family of 6.

Thai Pineapple Chicken Curry

A simple recipe - which is what I needed to introduce myself to Thai cooking. Halved it, and easily got 4 servings (but needed extra rice).

Rum Raisin Cookies

Reviewed: Aug. 14, 2009
I added roughly another 2/3 - 3/4 cup flour. I soaked the raisins over night in 50 ml rum and and 25 ml rum extract. I used the left over liquid which wasnt much, as an extra flavoring. I did cook them at 375 and not 425. I made 3oz cookies, and they took about 20ish minutes. Cookies turned out great...my husband likes them alot.

this recipe was ok, but next time I'm going to put the fruit on the bottom and then the cake on top...when I put the fruit in gollops on top, it just went directly to the centre...and we like an even amount of fruit tasts...but will try again, so rating may change!

Oatmeal Peanut Butter Cookies III

Reviewed: Aug. 11, 2009
Excellent peanut butter cookie recipe - best I've tried so far. Read previous comments and doubled the cookie recipe, but not the filling. Glad I did, as my boyfriend thought the cookie sandwitches were good, but preferred the cookies, sans filling. As well, only baked the cookies for 8 minutes. this way, they stayed really soft and chewy after they cooled. Ended up using half of the cookie batter and froze the rest. Just finished making cookies from the frozen dough. The dough froze really well and the cookies turned out great. Again, made half into sandwitches and the other half as 'regular' cookies, as we prefer the 'regular' cookies oven warm, but the cookie sandwitches are much better cold. This will become my standard peanut butter cookie recipe.

Triple Berry Crisp

Reviewed: Aug. 2, 2009
I was looking for a recipie for the saskatoon berries I just picked, but couldn't find any, so I tried this and just replaced the fruit mixture. Its, good, but really sweet. I thought I would love this, since it has a top and bottom crust, (my fav.part) but this is just too much! It definatly needs to be served hot with ice cream!

First time I've tried beef ribs, and I followed the recipie exactly. Not enough sauce, you should double it. I think the sauce would be better on pork ribs.

This is really good. I used less oil also, and added some chipotle chili powder it was great... Marinated steaks all day. My husband did not add BBQ sauce while cooking them and they were still very flavourful.. Will use this often.

Best Big, Fat, Chewy Chocolate Chip Cookie

Well based on eating one right out of the oven these are fantastic. I'll have to see how they are in a bit. I chose to just bake a few because there are only 2 of us in our apartment. I froze the rest of the dough in balls so I can bake some cookies whenever I would like.

Downeast Maine Pumpkin Bread

Reviewed: Jul. 23, 2009
I originally gave this 3 stars but after I left the bread for a day I found the cloves mellowed and it tasted much better. I love that I could replace half the oil with applesauce to decrease the fat a bit. Also I only used 2 cups of sugar as well. I think that extra cup would have be overkill.

Jeannie's Famous Potato Hamburger Casserole

Reviewed: Jul. 21, 2009
I was feeling lazy, so I did as another reviewer suggested and used tator tots. I then used only 2 cups of cheese, Kraft texmex mix(chedd.,colby and montery jack). If I make it again I will mix in some frozen mixed veggies so it will have at least something nutritional about it! Oh, and the cream sauce took about 25 min. to thicken, with the help of an extra 1/4 cup of flour. it looked like way too much,(not adding the extra cup of milk) I thought maybe I read the recipie wrong, but it turned out fine. My 9x13 dish was overflowing, next time I'll use my lasagna dish!
