Green Eggs and Ham Quiche

Reviewed: Nov. 10, 2009
I wasn't sure about this at first, but the taste only gets better as it sits! I had only a tiny bit of spinach, so I added some cooked chopped broccoli. I also added some garlic to the onions, which I cooked in a little butter, before mixing with the broccoli/spinach. I mixed the baking mix, milk and eggs separately and then stirred everything together, so as to get a more chunky texture. Added the ham and cheese on top of the 9 x 9 glass dish. I cooked it 35 mins @ 325 and an additional 15 mins @ 350 because it was totally jiggly!

Sweet and Sour Chicken Stir Fry

We loved it - following changes - used red, green peppers along with mushrooms instead of zucchini. Threw in a little sesame oil & pineapple chunks into the apricot sauce. Served on chinese noodles - very nice!

Puttanesca or Kalamata Kwik Sauce

Reviewed: Nov. 9, 2009
This was a quick/easy sauce to make up! I added abit of red wine into the sauce/along with a few heaping spoonfuls of chopped canned tomatoes/abit of basil/fennel and it was AMAZING! I did add abit more crushed red pepper then asked for, as I like abit of heat. This is something I could easily make up on my sailboat for a quick meal - and not just at home!

Cheddar Bacon Hamburgers

Funny - followed recipe exactly except for adding 1 egg to bind it - put more horseradish than it called for (love horseradish) - & yet, didn't really taste neither it nor the bacon bits. Close to bland...

French Onion Soup I

Great soup except we used Emmental cheese, as that is the cheese used in authentic French Onion soup. Quick and easy to make.

Shrimp Fettucine Alfredo

Reviewed: Nov. 8, 2009
This is a great recipe, but my wife an I cannot stomach heavy creams, so we substituted the half-and-half with 1 1/2 c chicken broth, 1/3 c cream cheese and 1 tbsp of corn starch. You will get the same consistency and similarly great flavor. I also used raw shrimp and added a handful of chopped cilantro.

Lemon Mushroom Herb Chicken

Reviewed: Nov. 5, 2009
Big wow in taste and for serving to guests I'd say. The only difference I did was slice the chicken into thin strips instead of leaving them whole, and I added fresh diced mushrooms, diced red peppers and 1Tbsp of capers to the sauce while it was simmering.Chicken was tender and super tasty. Thanks for a great recipe

Lite Carrot Cake

Reviewed: Nov. 4, 2009
I made half a recipe, using whole wheat pastry flour and adding 1 Tablespoon of honey, to avoid dryness. These turned out sooo satisfying! I used 3/4 cup cane sugar instead of white and brown sugars. I made them muffin style, and it was just what I was looking for. They're awesome.

Very nice! Dropped the hot spice/sauce as taco seasoning had enough for my delicate palate. Put them in a casserole under the broiler for a few minutes (just to melt the cheese).

Healing Cabbage Soup

Reviewed: Nov. 2, 2009
This is a good starting point to a great soup, but it lacked flavour for me. It was also a little too acidic because of the tomatoes. I will be making it again once I learn more about what seasonings go well with cabbage, and I will be using ready-made chicken broth, because concentrated bouillon didn't seem to add enough taste to the cabbage. It's still a good soup, and I will eat the rest, but I wouldn't serve it to anyone else, it's just too bland. As for the amount of oil in this recipe, it could easily be reduced by half. The film of fat on the surface of the soup is unappealing.

Sally's Spinach Mashed Potatoes

Reviewed: Nov. 2, 2009
Who would have thought that something with this much spinach could taste so good?!?! I used a whole package of spinach, even though it looked like a lot, 7 medium sized potatoes, 1/2 cup butter 1 small container of sour cream. 2 chopped green onions, 2 cloves garlic. I chose not to put any dill in it. I had no cheddar, so I put 4 Kraft singles on top, covered with some crumbled goat feta, and baked at 400 for about 30 minutes along with a huge fillet of salmon. Absolutely amazing and everyone loved it!

Rosy's Palak Paneer

Reviewed: Nov. 1, 2009
This was good, but there was an ingredient missing. Maybe my modifications were at fault? But I doubt it. I used margarine for ghee, about 3 tablespoons of ginger, only half of the required tomato paste, only 1/2 tsp salt (though I think 1 tsp would have been better), only about 3/4 cups water, fresh spinach, and chicken instead of paneer. With all these modifications you might blame me for thinking the recipe wasn't perfect, but really, there was something missing in the spices. It tasted great but next time I'll experiment with perhaps some curry and coconut cream. Thanks for a great base recipe though!

Creamy Rice Pudding

Reviewed: Oct. 30, 2009
With a couple of modifications, this tasted great. I only used 1/8 cup sugar and next time I'll make it even less - the raisins really sweeten it! I'll also add more milk and let it become much creamier since it was a pretty thick pudding, but very yummy anyway. Thanks - this was a quick, easy and healthy dessert to fix up while preparing lunch!

Creamed Cabbage Soup

Reviewed: Oct. 30, 2009
Very nice soup :) I added a cup of chicken broth after reading reviews and it was just perfect. Also used all 2% milk instead of cream, and I only had thin ham slices so I just chopped these in squares (had about 1 and 1/2 cups) and it was very yummy. Only used 1/2 tsp salt, too. Oh and I used 4 small carrots since they're healthy and yummy. Thanks for the great recipe - a very good way to use those cabbages!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Reviewed: Oct. 29, 2009
I was looking for a really unique recipe for rib sauce, and I will be keeping this one. I used apple cider vinegar instead of white for more flavour, omitted the paprika and whiskey, and still got a divine sauce. It only took about half an hour to reduce it. I then cooked the ribs in the oven. I would have added whiskey, but it's just not something I keep around in the house. This one is the best!
