Prince Edward Island

Canada’s smallest province, Prince Edward Island also has the smallest population. Prince Edward Island’s motto is a paean to the pint-sized: “the small protected by the great.” Prince Edward Island joined into Confederation in 1873. The name refers to the father of Queen Victoria, Prince Edward, the Duke of Kent, and fourth son of King George III. Known as the Garden of the Gulf, crescent-shaped Prince Edward Island sits above New Brunswick and Nova Scotia in the Gulf of Saint Lawrence, mimicking the curve of the coastline, from which it is separated by the Northumberland Strait. At one time, the island was part of the French colony Acadia. Much of the French population fled or was deported during forced expulsion in the 1750s. Along with beautiful beaches, red sandstone cliffs, and windswept vistas, there are many small-scale farming communities on this pastoral island. Potatoes are the most important crop here. Lobster, oyster, and mussel harvesting is big too. Prince Edward Island accounts for about 80 percent of Canada’s mussel production.

Ruby-Red Strawberry Sauce

I've made this as written, then me being me, I tried it with other kinds of juice (not concentrate), as well as other types of berries (both fresh and frozen); the recipe works great each and every time! Nothing but rave reviews each time I try a new combination. Thanks for the great recipe!

Leftover Casserole

This recipe is lacking serious instructions. What the author forgot to mention was to add 1 (8 ounce) package elbow macaroni - COOKED! If you follow the instructions given you will not be eating in 45 mins. I followed this recipe without cooking the noodles but felt because the noodles were uncooked it needed more liquid - so I doubled the milk.
