Catherine's Spicy Chicken Soup

This soup was fantastic!! I used skinless boneless chicken thighs because I sent my little brother to the store and he brought back the wrong thing, but it was just as tasty! Really good on a cold winter night :)

Gingerbread Waffles with Hot Chocolate Sauce

I didn't like these at all. I love the taste of gingerbread normally but these were too heavy with the taste of molasses. The batter was heavy too. I could barely finish one because of the heaviness and sweetness, I can only imagine what they'd be like with the chocolate sauce.

Chewy Maple Cookies

I wss getting bored of my usual chocolate chip and oatmeal cookies and decided to give these a try. They were wonderful! Definately very sweet, so I cut back on on sugar a bit and used walnuts instead of the coconut. Totally addictive!

Cheater Pot Pie

Easy to make, and my daughters both liked it. I used cooked boneless skinless chicken breasts instead of canned chicken. The recipe does not specify what to cook the frozen vegetables and chicken in, so I cooked them in the liquid from cooking the chicken. I found it quite runny when done, so I added 2 tbsp cornstarch dissolved in water to thicken it a bit. Also, at the temperature specified, the biscuits would have been burned by the end of the baking time. When I looked at them at 20 minutes, they were done, so I left the pie in the oven but turned the oven off for the last 5 minutes. Thanks!

No-Guilt Zesty Ranch Dip

Curried Veggie Dip

Finally a good recipe for veggie dip that is a little different. So, so easy too. Five stars. I halved everything only because I didn't have the full 2 cups of mayonnaise. Give all the flavours a chance to work their magic by a night in the fridge. My whole family ejoyed it. Kids and all!Thanks

Twice-Baked Mashed Potatoes

Broccoli Cheese Soup

Very good soup! Like some other reviewers, I doubled the broccoli, to make this more nutrition dense. I didn't double the cheese, and it was still plenty cheesy. I used my immersion blender to puree the soup before adding the cornstarch. Thanks!

Nana's Barbeque Sauce

VERY easy to make! Made a huge batch (36 servings). Modifications due to ingredient availability in the kitchen: - used 750mL (one large bottle) of Heinz Hot & Spicy ketchup. - omitted Worcestershire sauce and allspice. This tasty sauce keeps in the fridge for several weeks (in my experience) and is awesome with chicken. I'm glad I didn't use regular ketchup, as the Hot & Spicy version adds heat to this BBQ sauce, which I love!

This was a great recipe. Very easy to make and frost. If I made them again I would cut the frosting in half because I don't like my cupcakes over-frosted. All in all in was a perfect recipe, no changes needed to be made.

Roquefort Pear Salad

Fantastic salad! Got rave reviews at dinner party last night. :) To serve 8, I used 2 packages of spring greens, 3 bosc pears (unpeeled and chopped), no avocado, 1/3 of a red onion (thinly sliced), and 5 ounces crumbled Gorgonzola cheese (on the side). Doubled the dressing and the candied nuts (walnuts, not pecans). The salad bowl was emptied -- it was that popular! Ate it again today for lunch, with addition of 1 diced avocado. This version tastes great as well. Will be making it many more times... Btw, I am definitely not a blue cheese or Gorgonzola fan, but even I enjoyed the cheese when mixed with the rest of the flavourful salad.
