The Best Thai Coconut Soup

This soup was so TASTY! My only complaint was the chewy bits of lemongrass. The next time I make this I would cut the lemongrass in 2-inch pieces and then remove them before serving. I didn't follow the recipe to a tee as I wanted to use up 3/4 cup of leftover coconut milk. I cut all the other ingredients in half and the soup was still super TASTY!

Chlodnik - Cold Polish Beet Soup

Wow! Amazing recipe. Certainty the best borscht I've ever had, hot or cold. This is a great summer soup, very mild and refreshing. My beets didn't take 15 minutes to cook, they took 30. Other than that, this recipe is perfect. I didn't add the hard boiled egg to the mixture. Instead I topped each bowl of soup with the eggs and a bit of sliced dill pickles. SOOOOOO GOOOD!!!!

Creamy Hot Cocoa

Gawd! I made the mistake of making this before reading the reviews. Too sweet is an understatement. I thought my teeth were going to fall out. And i had already cut some of the sugar on my own. There are better recipes out there, I don't think i'll be attempting to make sense of this one.

Blaine Pizza Sauce

Also similar to mine, lol, the only difference is I omit the salt, and use salt free diced tomatoes as I am on a salt free diet, but once you add the spices it's fantastic and you'll never know the salt is missing, thanks for this basic wonderful recipe.

BBQ Steak

Tofu Parmigiana

This was actually really good. My two teenage kids and husband are not tofu fans so i didn't tell them what was inside and said 'just eat it, you'll like it'. They actually cleaned off their plates and went back for more!!! A success. They asked me to make it again for dinner. Thanks for posting it.

Rhubarb Curry Chicken

I changed the recipe quite a bit, but four stars for the idea of making a chicken rhubarb curry. I added onion and fresh garlic, and fried with the chicken pieces. Added curry powder, rhubarb and a carrot - simmered it all until the chicken was cooked. Added a bit of splenda brown sugar blend and regular splenda until it was a flavour that we liked - not too much though. Next time I'll add more carrot and any other vegetables that I have on hand. Definitely a keeper.

Pepper Jelly Glazed Chicken

I have made this several times and absolutely love it. I use my homemade red pepper jelly and bone-in skin-on chicken thighs (flavour preference). The glaze is so good and it's one of the easiest dinners to put together. Thanks for posting this recipe.

Buttertart Squares

I made these exactly as per the recipe instructions. I wondered how such a simple recipe could garner such rave reviews. Then I cut a small square out of the corner while it cooled on the counter. I literally stopped dead in my tracks as I chewed and walked across the room. The flavor was heaven. I was amazed. Hope there are some left by tomorrow for the ladies at my seniors ceramic class.
