Breakfast Pies

This is a very versitile recipe! I used bacon instead of sausage and shredded cheddar cheese b/c that's what I had. Very easy to just add what you like and take out what you don't! I made them to have a quick breakfast for me to grab on my way out the door in the mornings, great recipe, thanks!

Oatmeal Raisin Cookies I

First time making Oatmeal Raisin. Actually turned out great!!! I never even liked them until I made some using this recipe. Freezes well, just thaw for 2-3 hours before baking.

Cranberry Orange Cookies

I can't explain how good these are!!! I created this account just so I can tell everybody. I'm typing with my pinkies because I just finished glazing them(not mentioning eating them as well). So yummy! Freezes well, just thaw for 2-3 hours. I improvised and used clementine juice and zest for the glaze due to the lack of orange in my house, still turned out well. It does look AMAZING!

This is the best Naan bread I have ever had. I decreased the amount of sugar to 2 tbsp. because my family does not favor sweet bread. Absolutely scrumptious!

Chocolate Chip Banana Bread II

I halved the recipe...not enough bananas! This browned very quickly on top and I was worried I'd have mush inside and a burned top. I remembered a suggestion from another recipe to cover the top with foil half-way through baking. I think this saved my "bread"....but who are we kidding--isn't it cake? :-)

Peanut Butter Chocolate Cake

I only used half a package of cake mix and made a smaller version of the cake. I also put some of the peanut butter mixture on top of the cake before poring the ganache over it. It turned out amazing and everyone loved it. Will make it again!

Baked Pasta Primavera Casserole

This was surprisingly good for such a quick and easy to make dish. I follwed the recipe exactly, and everyone liked it. I think next time I might substitute some Asiago cheese for some of the mozzarella and add some minced garlic or garlic powder to make it more flavourful. Thanks!

Orange-Ginger Tofu Triangles

These are very tasty and easy to make. I didn't drain the marinade off before I baked them because I wanted sauce for the rice. My only problem with the recipe, hence the 4 stars instead of 5, is that the marinating time should be included in the total time. I ended up not eating this on the night I planned to because I thought it would be ready in 1 hour and 25 minutes. It did taste delicious the next night, though. Thanks!

Creamy Chicken and Wild Rice Soup

This is one of those sleeper type recipes. You know,very popular seasonally, usually autumn and winter. It then slips away while we enjoy the lighter fare of spring and summer returning again as the temperature drops. With few ingredients this is a soup that is definitely not stingy on flavour. I added about 1/4 C. small diced carrot, only to enhance the colour. Not having heavy cream, I opted for a mixture of 1/2 and 1/2 and milk. The finished soup has a perfect consistency while still warm. It will later require thinning. I suppose I am at a point in my own cooking where roux is no longer a four letter word. Which, by the way, was a long time coming and made for some mighty horrid outcomes. Everything was working as it should roux-wise here, but I became worried at the thickness while the cream was being incorporated. Thick enough to get tangled up and stuck inside the whisk even! Experience told me to keep adding the liquid as directed even though the potted floury blob didn't look promising. Keep whisking, and babysit, as this easily becomes overdone, quickly browning or even burning the pot bottom. More so, if using a thin (cheap :-})pot like me. Don't give up. It will work! Overall I think this is a deliciously fine soup. Thanks for the recipe.

Double Fudge Kahlua Brownies

Excellent brownies! I was a little leery of the pepper, so I added only 3/4 tsp. but you couldn't notice it at all. Added the chopped walnuts to the batter, but didn't sprinkle any on top, and that was just right for us. Thanks!

Roasted Lemon Herb Chicken

My husband and daughter liked this very well, and it is easy to make. They really like gravy, and I found that about halfway through the cooking time the chicken had soaked up all the juices. So I heated a can of chicken broth in the microwave and poured it over the chicken. There was plenty of juice at the end to make a lovely gravy and the herbs and spices from the rub really enhanced the flavour. If you are going to do this, taste before adding any additional seasoning to the gravy, because you probably won't need it. Thanks!

Cranberry Pumpkin Muffins

These are a hit! My husband is a muffin addict and very discerning. I only made a dozen (they're a bit small) and by his request a second 2 dozen batch is baking right now. The smell of our home is incredible. I melted margarine because we were out of oil and it worked very well.
