Chicken Divan

Great comfort food! Cut this recipe in half since I was only making dinner for hubby and I (with some leftovers!). I used fresh mushrooms and broc and did not have water chestnuts, so will have to try again as I think they would add great texture! I only used 1/4 cup light miracle whip, added some white wine, juice from one quarter of a lemon, 1/2 tsp curry powder, a handful of fresh parm and one can of reduced fat cream of chicken soup. I decided to add some panko crumbs on the top too with some reduced fat cheddar. Served over brown rice and this made a yummy meal!

Three Cheese Garlic Scalloped Potatoes

I made these potatoes tonight to serve alongside some BBQ'd porkchops and they were really good. I minced the garlic instead of slicing it (and mixed it in with the cream) and I didn't use provolone cheese (just cheddar and parm, and about half the amount of cheddar called for). The only complaint(s) I had were that I had to cook my potatoes about an hour and fifteen minutes (could have used an hour and a half) and the end result was way too greasy. I'm actually surprised nobody has really mentioned this. There is no need for the butter in this dish, there is enough richness with the cheese and the heavy cream, the butter just makes it greasy.

Special Deviled Eggs

These were pretty good but like other reviewers I found them runny. Maybe the relish should be strained and a touch less mayo used. I also think that green onion would taste less harsh. The horseradish flavour was nice though.

Mocha Cream

absolutely fabulous. Very easy, very tasty and not too sweet. I used Nescafe light roast instant coffee. It is milder in taste, for those who like mild coffee. Came out perfect! I used it to frost the whipped cream II cake from this site, and it came out perfect. Had some leftover, so I gave them to my mom who loves to make mochaccinos, which would be perfect topped with this cream~ thanks for sharing!

Whipped Cream Cake II

OMG, it's been a while since my family has given a perfect review to something I bake! I made it for mother's day, and it was a huge hit. I followed the recipe exactly and frosted with mocha cream(from this site). It came out fabulous! I made sure not to over beat the batter, and was a bit worried about its texture. It was a bit grainy when I poured in the cake moulds. DOn't worry, it comes out just perfect after baking! Light, fluffy, yet full of flavor. My mother even said it tasted similar to great pound cake. One reviewer said that it tastes like whipped cream? I agree! My brother who is usually very difficult to please, called me at home after I had left their house, to tell me that he had just had a piece, and loooooved it! He also said he would pay at least $40 for it! And he never calls me to tell me he likes something, so that must mean something! Thanks for that great recipe, outstanding!

Garden Tuna Sandwiches

This was good. I left out the whole amount of mayo and I felt the sour cream gave it enough moisture. I loved the crunch! I always add a slice of cheese to my tuna sandwiches. This is a very nice recipe and it’s light and tasty. THX

Italian Scallop and Shrimp Salad

Wow, this is very nice! I followed the recipe as written and I recommend this dish to all. I served it as a side dish instead of an appetizer and it complimented my BBQ meal very well. The celery leaves are a nice touch and adds a unique fresh flavour with the combination of parsley & garlic. THX.

Lemon Whipped Pie

D-Lish! I allowed the lemon gelatine mixture to thicken a little (as it cooled on the counter) before I stirred it into the other ingredients. I pressed out all the juice from the pineapple and stirred that into the whipped mixture.( I wish I added the zest from a lemon. I’ll do that next time) I had enough whipped pie batter leftover from filling the two 9’ pie crusts to fill 12 tart shells as well!. Allow the maraschino cherries to drain in a sieve before you use them to garnish the pie or else the juice will bleed/tint your pie pink. This would be a very nice dessert to take on a picnic or BBQ in the summer. It’s very light and refreshing. This pie needs to be chilled overnight or put in the freezer. It will not be frozen but will set firmer as I think the fridge isn‘t cold enough. THX

Artichoke Chicken

Gave this a three star only because of it lacking in flavour and had to do changes in it This was a good basic recipe to start. Seeing the reviews and noticing that it lacked flavour, I mixed can cream of mushroom soup and a touch of milk with the halved mayo and added the other half sour cream, sprinkled the top with grated marbled cheese and parmesian then topped with broken garlic seasoned croutons. Did add garlic and seasoning salt to the sauce. Also added sauteed onions over the chicken before adding the sauce. It was delicious this way. I don't really like artichokes so the next time I've decided to use cauliflower and broccoli or frozen mixed veggies to simplify it. Served it over rice because the sauce really goes well with it. Yumm. (I actually got the idea from a recipe my sister in law gave me to make pheasant devine.)

Addictive Sweet Potato Burritos

Delicious. I doubted whether or not I would like these but they were sooo good. I made the six cups of kidney beans myself, in the crockpot and then I mashed them using the food processor before adding them into the onions. I only added in 1 cup of water, which in my opinion was not even needed since my beans were already kind of liquidy. I followed the rest of the recipe as stated except I used 2 parts bean mixture and 1 part mashed sweet potato for every burrito. Used whole wheat tortillas and served them with guacamole, sour cream, salsa and stir fried veggies (I used green & red peppers + broccoli). Would make these again, even my picky brother loved these, thanks.

This is really good, I did take the advice of others and used Jalapeno peppers, but I also used a red onion and added some chopped black olives, and a little garlic....yummy

Michelle's Peanut Butter Marbled Brownies

WOW!! These should come with a warning label. I just made them and am now nursing a burnt mouth because I couldn't resist trying them before they had completely cooled. The tastes combine really nicely without either overpowering the other. Easy to follow recipe and a super nice chewy brownie texture. Thanks so much for sharing ... I'm not sure that I will be sharing the first pan with anyone else :-)

Thai Pineapple Chicken Curry

Cherry Buttermilk Scones

These scones were good - not great - but they were good. The cherries added a nice flavour and I did add 1 tsp of almond extract, but found the dough sticky and somewhat difficult to handle. All in all, a recipe worth trying!
